  • Another one of my retro recipes, this week is Jelly Slice. I have eaten this on a few occasions but never made it because it looked too complicated, but it really isn’t. The biscuity base combined with the condensed milk filling and jelly makes this slice so moreish. Make this for your kids, or for parties - sometimes the oldies really are goodies.
    Ingredients:
    250g plain sweet biscuits/cookies
    175g butter, melted
    Pinch of cinnamon
    395g can condensed milk
    ½ cup lemon juice, strained
    ¾ cup boiling water
    2 tsp gelatine powder
    85g red jelly crystals
    Method:
    1. Grease and line a slice pan (20cm x 30cm).
    2. Process the biscuits to a fine crumb; add cinnamon and melted butter. Press the biscuit mix into the pan and chill for at least 30 minutes or until firm.
    3. Combine condensed milk with lemon in a bowl.
    4. Combine boiling water and gelatine in a jug, stir until completely dissolved. Stir into condensed milk mixture. Pour over biscuit base and return to the refrigerator for at least 1 hour or until set.
    5. Prepare jelly according to the packet instructions but use 100ml less than directed. Let it sit and come to room temperature. Pour over the milk filling and chill for a further 1 hour or until jelly is set.
    6. Remove from pan and slice to serve.
