Because it doesn't matter if you know what they do. You will not be able to replicate it. It's like Roubuchon, Jean George, Alsatian.. They all have cookbooks published with exact recipes. You can't replicate the restaurant level even if you tried

This chef almost convinced me to order the bichotan charcoal, but I had to realize once more that this is out of my reach. You would not believe how expensive it is to get the stuff in Canada…
For me. Controlling charcoal grill is one of the highest level of cooking. It is an expertise which most people even don’t recognize. Very very difficult to maintain. 👏🙏
I love this episode and the chef's vibes. I have to say that I was distracted/disappointed with the mistakes I saw in the captions. Some of them I think could have been easily noticed if you know what the chef is talking about. Just for example 13:22 it says "tartar sauce" but he clearly makes tare sauce after, which was correctly noted later. Out of respect for this chef and the viewers, I think someone should check these captions.

reminds me of a hotpot restaurant ran by a former butcher, dude had the whole pig broken down into so many special cuts, some pieces were so expensive as the whole pig only had one of sorts which is also unavailable in the wider markets as usually the butcher eats it himself
