My lilacs just finished blooming 😕🤣 I just learned about being able to make the lilac jelly because I was researching medicinal properties of plants I already have on my property. I will definitely be trying this next year.
Unfortunately lilacs never stay in bloom for very long. 😢 They are such a wonderful flower. I have had lilac jelly on my list of things to make since 2018 or 2019 when I found out about it. Sometimes, it just works out that way. I hope you enjoy making it next spring. 🌱
@@UnderThreeAcres At least I got to enjoy the blooms this year. My plate was full anyway with finishing out the year with virtual school. It gives me something to look forward to next year! Thank you for sharing 🙏🏻
Unfortunately boiling it will kill many of its many medicinal properties but maybe there's a little left 🤞 But you're canning spring/early summer.... Nothing more magical than opening up a can of spring/summer later in the season/year ☺️
I just picked my lilacs today, here in High River, Alberta. Spent the entire day (4+Hrs- while watching TV)picking off the green parts! It was a long process! I had no idea lilacs were edible. I am so excited to find your video and look forward to making my jelly tomorrow. Can I water bath it!?
Hello fellow Albertan! High River is a beautiful place. I haven’t been there for a few years.. The lilacs are a bit tedious to pick apart. The double flowering the varieties are the worst. Yes! You can water bath can it. I am not sure what your elevation is, but the base time to water bath is 10 minutes and then you adjust for elevation.
@@UnderThreeAcres thank you SO much! I believe our elevation is 3200ft… also, have you looked into the benefits of Borage!? It brings up the nitrogen levels that other plants LOVE and has amazing health benefits and self propagates

What does it taste like
It tastes flowery, like it smells. It is definitely not my favorite. I much prefer the dandelion jelly. That tastes like honey.
Is it 4 cups of sugar for each pot?
Yes. Four cups per pot/batch.
You can use low sugar pectin if you don't want it to be so sweet, that's what I do
