For those whose first language is not English, in America "how are you doing?" is a fairly shallow question, used as a greeting. In my experience, in most cases the question is not genuine. I probably speak for many Americans, to one extent or another, when I say that when I am asked "how are you doing?", I have only 2 replies. Generally, I just say "I'm fine", which doesn't mean anything at all. It's just a response to a greeting. If I know you personally and am very close to you, MAYBE I will tell you how I'm really doing.
I'm with you on keeping it simple. But these are some other expressions that native English speakers might use so it's good to know them even if you don't use them.
