  • INSTANT POT POTATO SALAD with VINAIGRETTE DRESSING
    Ingredients:
    2 pounds of nugget or new potatoes, cut into bite-size pieces
    1 stalk of celery, diced
    1/4 medium onion, finely diced
    3 green onions, green part chopped, more for garnish
    3 eggs
    Vinaigrette:
    3 tablespoons olive oil
    3 tablespoons apple cider vinegar
    1 1/2 teaspoons salt
    1/2 teaspoon pepper
    1/2 teaspoon garlic powder
    1 teaspoon sugar
    1/2 teaspoon everything bagel seasoning
    1 teaspoon grainy mustard
    paprika and seasoning salt for garnish
    1. Place 1 cup of water in Instant Pot.
    2. Put potatoes in a steamer basket and place inside the Instant Pot.
    3. Place 3 eggs on top of the potatoes.
    4. Put the lid on the Instant Pot, and cook the potatoes and eggs on high pressure for 4 minutes.
    5. While the Instant Pot is going, make the vinaigrette dressing by mixing the oil, vinegar, spices and mustard together in a small bowl and set aside.
    6. When the Instant Pot is finished, let it naturally release for 5 minutes before turning the pressure knob to venting.
    8. Take the eggs out and place them in an ice bath to stop the cooking process.
    9. Take the steamer basket out of the Instant Pot and let the potatoes cool down while still in the steamer basket for about 10 minutes.
    10. Gently mix the potatoes, celery, onion, green onions and vinaigrette dressing. Slice eggs and arrange them in a circular pattern on top. Sprinkle with seasoning salt and paprika and extra green onions.
    Voila! A classic and yummy side dish to go with your dinner. This potato salad is a also great idea for your next BBQ, cookout or potluck because it does not contain mayonnaise or dairy-products so it doesn't need to be refrigerated right away.
