This is gonna be a long comment. Don't expect everyone or anyone to read all of it for that matter lol. So I grew up in my dad's house in Bakersfield California. Didn't think I ever had much of a life. A few girlfriends who all turned out to be the type of women who wanted me to change. I didn't like that so you know, hugs and goodbyes respectfully to them. I moved to Arkansas and started my job as a cook at a casino. There I met a girl, my now wife sierra. We broke up once and I moved back to my dads house. It took me a year to get over her. After that year lo and behold she hits me up with "Hey, I have cancer. It's stage 4 ewing sarcoma and I don't wanna die alone." I told her "Look, I knew you were gonna hit me back up. I was just out waiting on you." About 6 months later I was back with her, fast forward 2 years and married to her. People all the time ask how she is doing. I tell them she is ok. I am just not ready for the day when shit hits the fan. The one thing I always get asked is "what are you gonna do when shit hits the fan? And I tell them this....."I wanna travel the world. I want to ride on the back of a train with a backpack full of food and essentials for survival. I wanna go to mount Rushmore and actually see the presidents in the mountain but from the top of their heads. I wanna see snow from the top of a mountain for the first time. I wanna skydive, bunjee jump, get tattoo's, ride a motorcycle........I don't want to be tied down in a home the rest of my life where I will die in a lay z boy chair........dude I wanted to say that I admire your courage brother. Going out and seeing different parts of the world like this. I envy it man. Sure not all that sparkles is gold but still the price you could try to sell your memories for would be priceless. Sure you can make the next dance move on tik tok or be the next big thing on TH-cam......but how many people can say they have camped in a trailer in -19 degree weather? Or say that they visited a beach, all whole carrying their home with them? You are awesome man and I hope you live to be 110 bro because you are truly an inspiring person to me. Just like the kid from that movie Into the Wild. Idk honestly what I am gonna do when shit hits the fan for me......but right now, exploring the world and having no ties to anything sounds legit. Peace brother. May you have many safe travels. And may you always find comfort in life dude.

Those huge “clams” are called geoducks. They are amazing as sashimi. Just a quick blanch in boiling water, peel off the chewy outer skin, slice into thin pieces, dip in wasabi and soy and a bit of lemon and enjoy!
I believe Anthony Bourdain had them on one of his shows. I gotta try when I go to Mexico

Hey! Great truck cooking vid! That clam thing that squirts is called a geoduck (gooey duck) and for saffron use, only use 1-2 sprigs.

That make a device thats like a large hook that you use to move the dutch oven when it's hot and remove the lid. Definitely worth the investment. You should get in the habit of turning the lid to help heat things evenly. Much love bro.

The best way to extract flavor from saffron is to soak the threads in hot (not boiling) liquid for 5 to 20 minutes. ... I like to soak the saffron in stock or wine (rather than water) to add to the overall flavor of a dish.
