    I started watching your channel to improve my Kamado Joe Jnr cooks but the way you use the solo stove has really got me interested in cooking on wood.

    I ❤ my Solo Stoves🎉 Actually, I use Vevor knockoffs. I burn wood pellets exclusively! The perfect firewood as far as I’m concerned. I buy the cheapest cooking pellets available $14 for 40 pounds locally. Enough for a 45 minute roaring fire every night of the week. Like pellet grills, they require very little attention. Just don’t add too many pellets and give it an occasional stir.

    are you on a covered patio? if so, how much clearance do you have between the top of your solo stove and the ceiling?

    I'm surprised to see something so highly acidic like vinegar in cast iron and not make a metallic taste. I'm going to try this exactly the way you did, but use my porcelain enameled cast iron Dutch oven. Great video, thank you

    Genius!... I'm thinking about fabricating a large steel 20" diameter cover... maybe 12"-14" tall... with adjustable venting on top and a large access door on the side.. or even simpler using a lightweight large aluminum pot flipped upside down and adding an adjustable vent to that... converting the solo stove into a vertical smoker.. do you think that would work? Would aluminum hold in the heat?

    This was a fun watch. Super creative. I’ve been thinking about trying a cook over wood in the Joe rather than charcoal. My two favorite restaurants now town cook over a wood hearth, and the flavor is to die for.

      i would absolutely do dome open / open burn, or like what i did on that brisket video cooked with wood where you are full burning 1-2 chunks at a time so the fire is always showing flames. that brisket tasted awesome, so there is definitely something you don't get with just charcoal

      nope, dry brine uses a normal amount but gives it time to work into the meat

    Hi, do you finish cooking meat, say Briscott to a timer (say 8 hours) or when the internal temp hits the required heat? 👍🏻

      thanks Scott, always temp not time (brisket probe feel 197-211 with 203 being the most common right feel)

    Was there a smokey flavour to it? I've looked at these and I'm intrigued but I still love the smoke flavour of a traditional smoker. So if a device is smoke free, does that mean you're losing that flavour profile? Thanks, great video, very interesting.

      it tasted more like an offset than a campfire if that makes any sense

    Would a solo stove fit inside a big joe instead of a firebox, maybe with a sloroller on top. Might give really clean smoke (might even such smoke back to the coals around the stove, or might not work due to the lack of oxygen..

    This looks great! I have a neighbor who has one of these and I'm definitely going to get him to try it.
    I also noticed that you have a different vent cap for your junior. What kind do you use and you find that easier to use than the daisy wheel?

      thanks Dan. Yes its the SmokeWare stainless vent cap. it doesn't let rain in, allows more total air flow and doesn't move when you open the dome messing up your settings.

    Just like a charcoal grill, you could have pushed the coals to the sides and put in a foil pan on the bottom to regulate that heat. Just my opinion.

      its essentially a wood fired open faced kettle at this setup, the wood was a nice flavour vs. charcoal which we normally use all the time .... interestingly i learned the top of the weber kettle 18" fits perfectly so you can add some more efficiency should you wish

    Looks pretty nice. I've personally got my eye on the large insulated cabinet from Lone Star Grillz (as at the price point the "Mini" sits at, I'd rather just pay the extra $400-450 to get double the space). From the research I've done, it seems to be the best bled of "closest smoke flavor to an of an offset you can get without being an offset," large capacity (as much as I love kamado cooking, even the 42" one from Komodo Kamado has tiny capacity compared to this), and "set it and forget it."
    I want something that will let me cook a bunch of briskets, pork butts, and ribs at one time, and cooking my first brisket overnight taught me I'd much rather get my sleep than get up to throw wood on the fire every 45 minutes.

      At these lower cooking temps the walls are less warm than they get with a Kamado in them which is what they were made for but appreciate the safety concern
