Here are some simple tips to help discern a quality bird from the rest that claim a good eating experience:
1. Information - label should be informing the consumer the practices and benefits of their product. It should be information, not sensation!
2. Body Conformation - the body of the bird is proportional to the quality traits of a heritage breed. Genetics and animal welfare are intimately tied to the eating experience. Does the protein illustrate this in color and size proportions?
3. Price - Mindful investment in companies and their practices. Instead of paying for the water in the package or improper air chilling, pay for properly raised, processed, air chilled and produced product.
