Honestly, even if I don't 100% agree with you on the mods front (I personally have never been fond of optifine, I prefer open-source alternatives like Sodium, and I think Appleskin is actually pretty handy since I'm not great at hunger management), I can at least understand where you're coming from and I think that's cool. I also appreciate that you don't dismiss this stuff outright; everyone plays differently, after all, even if you personally think that the game is overall more fun played unmodified. I do think it's a bit weird to lump together mods like Appleskin which make invisible features (e.g. saturation) visible with stuff like Fullbright which make normal features (e.g. light) invisible, but eh, it's not too big of a deal lol.
I use dynamic lights because it keeps the emersion while also achieving the same with as fullbright, not having to use as many torches (at least i think that's what ppl use it for ive never used it too much)
Can we also agree that farms are on a similar level to make the game boring when you don't have to search for things and makes you lazy to search and explore things that you need
the problem for me is that on newer versions, fullbright and other mods help me run the game smoother on a bad laptop. Whenever my friends and I are feeling nostalgic, I will always use just vanilla with optifine. so much more fun
To add to this, don't metagame too much! I never use farms, and I wear iron armor because it looks better than diamond. It's more fun than just building the same farms everyone else does. (iron farms and the such are what I mean, not crop farms. I still build crop farms, just not automated ones.)

Tbh I only use iron farms for rails
And I use creeper farms for fireworks (for elytra)
both are ultra expensive...
