A Must try Vegetarian Recipe | Vegetable stew made with soya chunks

  • This simple recipe is delicious, healthy and also vegan/ vegetarian friendly. If you want to limit your intake of animal protein give soya chunks a try. This stew came out so well and everyone thought it was beef chunks I used.
    It’s a very simple process
    - start by blending your pepper mix: pepper, onions, ginger, garlic and one tomato
    - cut your vegetables into desired sizes: I used carrots, cucumbers, onions, bell pepper, tomatoes and green beans
    - Add some hot water to the soya chunks and let it sit for 8-10 mins and drain it
    - I toasted them slightly with some pepper and all purpose seasoning to give it a spicy flavor
    - Now after all this just start the stew process by adding the sliced onions and curry powder into a pan with oil
    - then add the pepper mix, give it a good mix, add the carrots and cover for some minutes.
    - Add tomato paste, give it a good mix and then add the rest of the veggies. Add seasoning of choice
    - after about 10 mins, add tge soya chunks, cover and let it sit for about 10 mins
    - Serve and enjoy
