I have been visiting the Cannon forum and asking a lot of questions.. One of the videographers there told me that they shoot at base ISO 3200 even when going below 800 ISO. It would be really interesting to see a comparison and analysis on the difference between these two modes.
It's on my topics I want to cover list, but I have to figure out how to test it. Either I need to drop some cash on a exposure step wedge, or figure out how to do something similar without it.

As far as I can tell, that's correct. The raw data is unchanged regardless of the noise reduction settings. In fact, it doesn't seem to be used even by Canon's Cinema RAW converter to apply any form of noise reduction there either.
