For anyone interested.....I highly suggest you go suuuuuuper light on the cinnamon. Just the tiniest amount can overpower the whole pot. If you're a giant cinnamon fan go for it. But just a little bit can mask all the other flavors.
I definitely use Trader Joe’s Italian tomato paste and sauce. That chili looks delicious. I use ground turkey. I will try with the cinnamon and cocoa. You are right about the extra cooking time with dry beans. I will try the canned ones this time. Thanks, AB.
Make sure you check the sodium on your canned beans. I typically rinse mine in a strainer before adding. Lots of salt in there, and if you add more in the cook, it can end up too salty. I will add one can of my beans without rinsing, because the bean juice acts as a thickener.
I use cocoa or a chocolate bar 🍫 and oh man it’s so good, I use these in my roasts as they cook in the oven also it makes such a difference in your roast and gravy

I've put baking cocoa in my chili before, does not make it taste like chocolate, but adds a richness and a bitterness that are very pleasant. It's a great secret ingredient! I generally stick with black beans, but it's all good that way. I like to take whole coriander and comino (cumin) seed and toast them in a dry pan, then grind them up. Brings super flavors and aromas. If I feel crazy I'll use whole fresh Roma tomatoes, but that's a lot of prep work. Worth it though. For peppers I like a variety for flavor, bell, ancho, poblano, jalapeno and I usually slip one habanero in for some good heat without making it too hot. I'll vary it up, depending on what I can find at the store. Hatch chiles are always good to have as are chipotles for that fabulous sweet smokiness. Finally for meats I love a venison chile. I have some in my freezer now from a friend. I'll mix that with some beef and some Mexican chorizo, and of course a healthy quantity of bacon. Top it with scallions, cheese, sour cream and fresh cilantro. Yum!

Made chili in my crock pot today...Handover Red Beans, Bush Black and Pinto Beans, Hunts tomatoes paste, tomato sauce and diced tomatoes...with 80/20 ground beef. Can't put in hot peppers...add them to my bowl everybody can't handle the heat.

This is a pretty good recipe. I swear by that cocoa powder. I think beans are to taste. I don't like a lot of beans in my chili. What I do is get one can of the mixed chili beans. You can get them with all kinds of beans that go in chili mixed up in one can.

I've always dropped a Hershy's chocolate bar into my pot of chili while it's been slow simmering all day....has the same affect as cocoa. I've even used a Milkyway bar in a pinch.
A friend of mine told me about adding dark chocolate or cocoa in there a while back. At first I thought the idea was stupid, I did some research, found out it's a thing, did a test batch and I have been putting it in ever since.

Use cacao powder it’s better than cocoa powder. It’s made from fermented cocoa beans that have not been roasted so it’s cold processed. Beautiful chocolate flavour. Try it out.

Chili with cocoa powder is great. I like to add some instant coffee to bring out the flavor even more.
2 tablespoons of regular coffee grounds works

NICE. A year ago I experimented with some Mexican Chocolate in my Chili. It gave a nice, Rich, Savory flavor to it. 😊
