I did the same with a straight line of top cabinets. Used some boards from the old kitchen to fill up the space between the wall and the rail. The walls are straight overall, but in the corner, the wall was a bit deeper.
Do you mean big sheets of plywood or similar? That's possible too but you'll need to have that at hand. I've tried using a shelf or cabinet side but they don't reach far enough to give a good reading of the corner.

For shimming, I use regular wood shims. Not the big ones contractors use for windows and doors but the smaller ones.

Well done. Attention to details when installing the rails pays off when hanging the cabinets.
We check the 90 degrees by put 2 long 90 deg. wood in corner and see where the gap come and how much is it
