Turning One Bowl Cake Into Fudgy Chocolate Cake Pops

  • I had so much fun with @HouseofNashEats and @Savory Experiments making these rich, fudgy chocolate cake pops are the perfect one-bite dessert! My 100% from-scratch recipe uses just one cake pan and makes plenty to share.

    Ingredients
    For the cake
    1 cup all-purpose flour (125g)
    1 cup granulated sugar (200g)
    ⅓ cup natural cocoa powder (33g)
    ¾ teaspoon baking soda
    ½ teaspoon salt
    ½ cup unsalted butter, melted (113g)
    1 large egg + 1 large egg yolk, room temperature preferred
    ½ cup buttermilk
    1 teaspoon vanilla extract
    ¼ cup very hot water (must be steaming hot!)
    For the frosting
    ½ cup unsalted butter, softened (113g)
    1 teaspoon vanilla extract
    ⅛ teaspoon salt
    1 ½ cups powdered sugar (190g)
    ⅓ cup natural cocoa powder (33g)
    2 Tablespoons heavy cream
    Assembly
    15 oz chocolate or white chocolate melting wafers or almond bark
    Sprinkles or Oreo cookie crumbs for decorating, optional

    Instructions
    00:00 Introduction

    00:27 Preheat oven to 350F (175C) and prepare one 8” round cake pan by lightly greasing with baking spray. Set aside.
    00:41 In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until combined,.
    02:30 Add melted butter and stir until combined.
    03:44 Add egg and egg yolk and stir well. Be sure to scrape sides and bottom of bowl periodically.
    04:22 With mixer on low-speed, add vanilla and then buttermilk, stirring until combined.
    05:26 Add hot water, stirring until ingredients are well-combined and smooth. Batter will be thin, this is fine.
    06:58 Pour batter into prepared pan and bake on 350F for 30-35 minutes, until a toothpick inserted in the center comes out with moist crumbs. Allow to cool for 15 minutes in pan before inverting onto a cooling rack to cool completely before assembling. Meanwhile, prepare frosting.
    07:53 Once cake has cooled completely, use your hands to crumble the cake into a large bowl (don’t mash the cake, just break into pebble-sized pieces).
    Frosting
    08:16 Place butter, vanilla, and salt in a large bowl and beat until smooth and creamy.
    09:03 Gradually add powdered sugar and then cocoa powder until completely combined.
    11:35 Slowly stir in heavy cream until frosting is smooth and creamy. Increase speed to medium/high and beat for 30 seconds.
    Assembly
    12:51 Add frosting and use mixer on low-speed to stir together until mixture is mostly combined, it will be smooth and not piecey. If you pinch the dough together between thumb and forefinger it should hold together.
    14:05 Scoop dough by level 1 ½ Tablespoons and roll between your palms to make a smooth ball. Place on wax-paper lined baking sheet, not letting the cake pops touch, and repeat until you have rolled all the dough. Transfer to freezer and freeze for 30 minutes.
    When cake pops have nearly finished chilling, prepare chocolate by melting according to package directions (I like to pour the chocolate into a 1-cup measuring cup or coffee mug for dipping) and portion out any sprinkles you’d like to use.
    16:07 Flip two cardboard egg cartons upside-down and use a skewer to pierce a hole in the center of each cup. Make sure cake pop sticks will fit snugly in the hole.
    17:12 Remove cake balls from freezer. Take one cake pop stick and dip the very end in chocolate, then insert halfway into the cake pop.
    17:14 Turn the cake pop upside down and dip gently into the chocolate, covering the entire surface of the cake. Allow excess chocolate to drip back into the cup then insert the stick into your holder. Immediately add sprinkles/cookie crumbs, if using.
    18:50 Repeat until all cake pops have been dipped. Allow chocolate to harden before removing and enjoying or storing.

    Wow, great video ladies! What a great hack to use the egg carton for the stand. I have used floral craft foam (the rectangular size) from the dollar tree or styrofoam, and I cover with foil, paper, or plastic wrap so none of the foam transfers to the food. The foam maybe is probably softer and easier to poke than the carton if the kiddos are helping, but either one is definitely a cool hack whichever one is handy! Thanks Sam, Amy, and Jessica for a fun and tasty video, it was great to see this baking collab between friends!❤

    I made red velvet cake pops from scratch using cream cheese frosting. Time consuming but so good! Boxed cake mix and homemade frosting tastes pretty good.

    I have always made cake pops from the box because that's what I knew. Even though this one takes more time, I am extremely happy to make your recipe. I don't make cake pops often so I'm excited to try them. Those look so soft and yummy. Awesome stuff!!! 👌🏻

    Hi Sam does the chocolate need to be any particular temperature for dipping?

      We made these with almond bark so it just needed to be melted there is no tempering necessary. :)

      I normally find it in the baking section right next to the chocolate. I normally get it at walmart. :)
