I’ve been trying to make tsourekia now for around 40yrs using Greek cookbooks and following Greek cooks on TH-cam and the tsourekia never ever worked for me they came out like bricks. Followed your recipe and my tsourekia came out perfectly. My family loves them. Thank you for your easy to follow recipes. You’re a god send. Love your videos they’re very informative and funny. Hi Niko I made these today. Perfect easy recipe. Just one question. I did 2 batches. First one I copied yours to a tee but found it was very stiff.
So the second batch I used less flour and same liquids and found it worked but I only managed to make 5 tsourekia.
Do you have any tips what am I missing. Thank you so much kind regards Alice
Such a great video, clear and easy to follow. Did you put both pans in the oven together, like one above the other and if so did you swap the pans halfway?
Thanks heaps Adaris! I did put them both in together one ontop of the other.
Sometimes I do switch them around and sometimes I don’t. But I always open up a few times when I can see the colour forming and at that point if I think it needs a rotation I will :)
I think it just depends on the oven also. Hope this helps!
Thanks for the reply, will give this recipe a try on Friday, they look great!!
@@nikolopaa you are a gem!!! Thank you so much for sharing this recipe. I made this recipe today and I am so so proud!! For the first year ever I have been successful in my tsoureki journey and my house smells amazing. Thank you again. Looking forward to trying your Mel for Easter Sunday
Sto malakiasou ! I thought you where off the boat! I watched the avgolemono vid.
Haha Ella the shorts are edutainment 😜 entertainment and education
@@nikolopaa love your channel. Your a legend. Your helping some of us get in touch with our traditions. Bravo
Niko please tell me if you used the juice of the oranges? How much juice for this recipe?
I didn’t use any of the juice :) only the zest
Hi Niko
Looks amazing
Where can I purchase baking trays like these ?
Or could you please give me the depth and length ?
I have never made tsourekia before
Also could you kindly guide me where to purchase that protein flour and spices ?
I have some maxlepi - not sure on the other ones
Thanks in advance
Hope to hear from you shortly 😊
Niko don’t worry
I’m making them now
I didn’t realise it may take a few hours to rise
I remember mum would get so upset waiting 😮
So I’m going to stay cool and try to be at peace 😅
While I wait …
Καλή ανάσταση
I’ll let you know how they turn out
Btw I googled the flour you use and went to local Woolworths
They had run out of boxes (maybe too many ppl making your recipe and using your tips)
So …. I walked away disheartened
Then I went back to try find a similar one
And a few shelves down there was 1 box of yours and the other one I got is an Italian one - (brand Molino) for bread pizza etc
I thought, “thank you God” for the 1 last packet Niko uses
And finding something similar (using the rest of the half kilo)
I have never made tsourekia before
Took 3 days off work to do those things my beloved mum always does
Thank you again
I love your recipe and praying 🙏🏼 they turn out similar
Ps - going to use Bessemer pans to cook them - they look similar in depth and length to yours
I read the measurements on the recipe
😊
Hey Mary! Hope you had a great easter :) 🙏❤️
Haha if that's why they ran out of the flour that would be pretty funny 🤣
Apologies for the late reply but really appreciate your comment and reaching out. Glad you enjoy the recipe and hope that they turned out great for you!
Yes we had a great Pascha
And my tsourekia were to die for in taste however they aren’t that fluffy.
What do you suggest Niko ?
Maybe coz I only used a kilo of that flour and 1/2 kilo of that Italian one ???
Yep they all went and bought the flour you suggested 😂
I wished I could send you pics
I want to try make them again in June on our school holidays
I’m a teacher in primary school
Any tips will be so appreciated
They are very yum though
Took ages to rise
Then the processes of rising
The balls to rise
The πλάσιμο of Tsourekia to rise
The house was a φούρνο
Winter and in singlets 😅
I don’t know how our mum’s make 3 times the batches in one hit
My lower back was wrecked after the 6
Absolute άχρηστη
But I was so rapt to try ❤ thanks 🙏🏼
Is it salted or plain butter Niko?
Plain unsalted butter :)
Can I use oil instead of butter?
I am sure you can but I haven't tried myself. This is how my Yiayia taught me :)
Ομόρφυνες χαχα
Tsoureki from the Turkish word çörek 😂
Half the words you use in everyday speech are Greek but we don’t remind you 😉 many countries around the mediterranean share common words and foods and there’s nothing wrong about it ❤
@@Hellene_Downunder half the words? Thats quite an exaggeration. Ill tell you that Greeks have now many Turkish words too but this is not about that. It is about naming Turkish foods Greek.
@@Aquarian55 if you are so upset over a loaf of bread why don’t you upload your turkish recipe? find something better to do with your free time than spread hate, there is already too much of that in the world right now ❤

Hey Alice :) Thanks for the comment! I am not to sure, it could be a range of different things. Just double checking that you were using a similar bread flour ? Did you allow it to rise to double ?
Its hard to pinpoint exactly but really happy that you managed to get some that you were happy with!
Hope you had a great easter 🙏❤️
