I separate my syrup into half pint jars, about half full, label and freeze them. That way, I can always pull the next one out and it does not get lost in the back of my fridge.

I always add orange peel in my elderberry syrup too - so good, plus I love the vitamin c boost! I usually add mine once I turn off the heat and let it steep during the cool down time to preserve even more of the goodness. I can’t wait to hear about your hawthorn batch too!

One way to avoid the straining mess, it is to put all the ingredients in a muslin bag and cook it in that. Quick and easy clean up - squeeze the muslin bag and then compost the herbs.

Friends, if you are adding home-made dried orange peel, make sure to source organic produce. Conventionally farmed oranges will have pesticide and fungicide residues that would be concentrated in a dried rind. EPA testing and certification may only analyze the part of a food that is eaten, and it's possible that citrus rind has higher levels than the interior of the fruit. I don't know that for a fact, so I need to check it out. I do know that the labels on the conventionally-produced oranges I got from Costco last week included information about a fungicide application to improve storage. Not good to eat those rinds, for sure!
There's a new research report in Frontiers of Toxicology, 01 Oct 2024 on the neurotoxic effects of neonicotinoid pesticides on developing brains. Not to imply that oranges are more or less of an issue than any other produce, but it's a reminder of the importance of buying and producing organic food.
