Using fresh all the bits cut off such as carrots onions any bit of the vegetable cut off I freeze till I have a couple of zip lock bags and then make vegetable stock to maximise all the vegetable off cuts and trim

We need to be reminded and taught how to do things the traditional way. No one knows this information. Besides, the food tastes better.
and how long does the vegies lay around in the freezers in the stores before they get bought and dont forget the huge warehouses where they get stored for who knows how long before they even get into the supermarket

I also freeze all my fresh cut veggies and more. Very convenient when you live far away from a city!

Mirepoix is French, soffrito is Italian. Since this kinda reminds me of a Minestrone, I think the Italian term is appropriate here

Pine nuts are just too expensive now for what they deliver.
That’s why lots of jarred pestos use walnuts. You put shelled walnuts in a hot dry pan and toast them for a few minutes before chopping.
