Ghee is lauded as an Ayurvedic superfood with anti-flammatory and digestion aiding properties. Ghee is so important to both Indian cuisine and identity.
How to make BUTTER :
Preparation time : 10 min
Ingredients:
Malai / Cream
Chilled water / ice cube
Process:
1. collect the malai from milk on regular basis
2. Take a grinder jar and pour the malai and churn it for 2-3 min
3. Add some chilled water or some ice cube
4. Churn it for another 8-10 min
5. Butter will get separated from the liquid that is buttermilk
Note: Butter milk can be used for preparing a dough, or drinking etc.
How to make GHEE:
Preparation time : 20-25 min
Ingredients:
Butter
Process:
1. Heat a heavy bottom pan
2. Add the butter to it and melt it in medium-low flame
3. Stir in intervals when butter begins to melt
4. Once the butter is melt keep in low flame and simmer it
5. Bubbles starts appearing
6. Stir continuously the milk solids will be covered to the surface
7. After sometime the milk solids will begin to settle at the bottom
8. You'll find some browned milk solids, once you find that be sure its now ready.
9. Remove from heat, strain it with some cotton cloth.
10. Cool down the ghee completely, before placing it in glass jar
Note: Make sure you stir continuously in low- medium flame, or else it will burn
