    Everyone really needs to stop complaining about the cook using hands to crumble the lumps of rice. Please! They are at home cooking not your food but their own for educating you.     I just came here to watch someone cook authentic Chinese fried rice. Instead I find myself embroiled in reading the comments section. Reading people cussing each other out over why someone does or doesn't like peas. Reading how one guy questions the "authenticity" of this particular method of cooking fried rice because the cook added peas and carrots. Reading people wonder aloud if the cook said adobe, agobi, agave, or what? Laughing at English renderings of Chinese accented English words. What is it about youtube that a video of someone cooking fried rice creates such an array of hilariously useless, vulgar, comically insulting and insipid comments?

    My family and I lived on the beautiful island of Guam for a total of 5 years, and we all love Asian cuisine. The fiestas we were invited to contributed to some of our best island memories. I love hearing Mrs. Ming talk us through her recipe - it brought back even more memories, like our Filipina friend Christy, who taught me how to cook pancit bijon. Fried rice is a personal dish, and very flexible. No 2 people cook it the same. Thank you Ms. Ming! You're awesome!!

    everyone has a different way of making it n as long as the result u are looking for is achieved, it's all good. i used to work at the chang hing inn of brooklyn, illinois years ago, but it's gone now. rice was prepared in huge rice cooker all throughout the day and used the same day but would be separated. the rice on top towards the middle, like the rice used in this video, was primarily used for frying because all moisture dries out n can instantly apply oil. the rice closer to the bottom would cook with more moisture n would be used for dishes like egg foo young, pork n rice, beef n rice...so on. so, if u can hold out for your fried rice, this technique is awesome. but if you're like me n need your f"fix" now, then go get it!lol great video!!!

    This recipe is EXCELLENT! That is all I have to say :) Anyhow, just a little tip, and for ANYONE ELSE who decides to make a video for fried rice, not complaining, but the pre-cooking the rice part, in my opinion, is one of the most valuable pieces of information for fried rice.

    Iam not one to leave comments, however when I came across this video for an easy/quick recipe, I see and hear of an indivdual lending information for seekers such as myself. I am highly entertained and amused of the comments rather than the information given on the video. Miss Ming kitchen did not share her insights for a score, i believe she done this video only to give/share advice to help others. Do haters, as they are called nowdays, really spend their time searching for anything to release their anger onto others? WOW that is unbelievable. Thanks for the vid, I'll give a try.     If your still wondering the second liquid she used was blue agave sweeter I buy it all the time, it's low glycemic so it won't spike our insulin and its tasty. I use it for many different things its basically a sugar replacement. Use it whenever you need a nice kick of sweetness without the damaging effects of sugar/splenda

    If I don't have dark soy sauce can I just use light? Also do you put the rice in the fridge or just leave it out? Can you use freshly cooked rice?

      josue rojas Many people including myself leave rice out. When you cook white rice if you put it in the fridge it gets all hard so we just leave ours in the pot. Tons of people do this and we learned it from a friend in Thailand.

    You definitely inspired my own fried rice:
    Sticky rice (left over in my fridge - next time i'll use the longer grain)
    Sesame Oil
    Sea Salt
    Black Pepper
    Frozen peas and carrots
    Fresh white onion
    Crimini Mushrooms
    Dark Soy Sauce
    Honey Sauce (left over packet from kfc)
    Salmon
    Sesame Seeds
    Basically components left over in my kitchen - but it definitely had that great fried rice taste! Next time I'll definitely try your recipe when I have the ingredients! Thanks for the inspiration!

      Chika Masamun'e No you make the rice let it cool all the way till B4 u go to bed then cover and place in fridge then the next day take rice out when u about to make this dish.NEVER EVER EVER leave food out over night and eat it so dangerous to do so .

    You don' really "fry" the rice. All your doing is heating everything up in the frypan. Its the sauces that brown the rice by coloring it. Just mix everything up in a big sauce pan for gods sake.

      Yes, but she is giving an option to have something from home to taste like what we consider good take out. What's the difference anyway? Either a wok or frying pan, might taste a bit different but what ever.

    I just made this and it is So Bombs!! So delicious and I used up my day old rice and left over pork. Fried up some chopped bacon. Cooked some onion and garlic in bacon fat. And topped with green onion cause I had no frozen veggies.
