Your are right. I just said so. I watched Ramsey's madeleine cookies video and I was so disappointed. His cookies lack their characteristic humps that even a non professional baker like me can achieve.
Ice cream scoop is about 4 cm. Melted butter gives the madelienes a more chewy texture than room temperature butter. That's how madeleines are supposed to be.

Hard to tell as there could be many factors. For example, the temperature of the oven not hot enough, took out the madeleines too soon before it is totally baked, the recipe you're using etc... You may want to try my recipe and see whether you have the same problem.

I'm sorry but I've always used metric measurements and it'll troublesome to convert every recipes to cups. You can Google for the conversion if you still prefer using imperial measurements.
