we donch have winter melon in yarmouth, nova scotia unless i go to the city. but i'm very lucky because the chinese restaurant here make these kinda chinese soup and they always give me a bowl or two. thanks for the recipe, will try it when i go to the city when the weather is warmer here.

Thanks for reminding of this soup! Will make it tonight. Just wanted to add something I used to see my Mom do. We have coil burners, so she would char the squid on them before adding into the soup. This created a more pungent smokey flavour and in a way - more aromatic and rustic :).

I also noticed that you didn't mention adding salt anywhere in the video. Well, what I did was I adjusted with some salt and found it to be more palatable. I also experimented with a small batch by adding more salt to see if it would taste better, but interesting enough, the more salt I added the worse the soup tasted which made me conclude that saltiness is NOT the primary flavor for this soup. I was wondering what is your opinion regarding the use of salt in this soup? Thanks in advance.

Irina Lau Hi Irina, this serves up to four people. As for the amount of water, I normally add an extra half a bowl of water to allow it to decrease as it cooks. Also, another tip is to get a really good stainless steel pot which is thick enough. Hope that helps!

it has a taste of cucumber but more juicy, it is like a "soup sponge" afterward. taste great . it a great combination with Hainan Chicken Rice/ chicken rice.
AnnK H It will be soft and not crunchy. But not so soft that everything will fall apart. As for winter melon, it really tastes like the rink of a water melon. :) It might be a little different from what you may already know or used to but give this a try. It's a nutritious soup :)
