I haven't seen winter melon, but we do have Chayote! I'm definitely going to make this. I bought a spiny chayote a little while ago and it wasn't exactly the most exciting vegetable considering the thorns.

Great recipe, one of my favorite soups with plain rice and a main meat dish like roasted pork, bbq pork or thit kho. The soup is very refreshing, lite and has a natural sweet taste from either the su su or bi, I use either one or the other bu I don't like mixing them together.

What I've seen here where I live (Thailand) are mostly winter melon soup with dried shrimp OR the whole different menu, the winter melon soup with salted lime (or should I call it pickled lime?), my mom usually cook it (the salted lime version) with chicken meat and a big chunk of winter melon, too bad I don't like winter melon much but the soup is very delicious!

I tried this dish out and it tastes amazing. The second time I made this, I substitute the shrimp with pork ribs and I added the fried shallots so good. Thanks for sharing this video.

actually, the head part give more flavour and sweetness to your soup. i think you can just leave the heads there and cook. if you dont want to eat them, you can get rid of those heads later :) in Vietnam, for those families who dont have much money, they only buy the heads of the shrimps because it's cheaper. p/s: you can also eat the heads, it's okay :)
Sure. My family rarely use fresg shrimp to cook in daily soup. We always have dried shrimp for quick preparation. I usually soak dried shrimp in hot water for 10-15 mins before cooking or if I'm in hurry, I just wash and throw them in immediately. Haha. The saltiness of dried shrimp, in my opinion, does not affect much (esspecially when you already soak them in water), so dont worry :>

Hey Helen, I made this today using the white part of watermelon rind and it actually tastes pretty close to canh bi dao. You should give it a try!

Sure. But soak dried shrimps in water overnight to soften them. Don't forget they are salty, so adjust the sugar and salt as you taste.

tại chị dùng tôm tươi khi xào gạch tôm nó ra màu đỏ đấy em ạ. Nếu tôm ko có gạch em có thể cho chút bột điều hoặc ớt bột thì màu canh sẽ đẹp em nhé :)
