    OUDERWETSE JAVAANSE JADAH
    500gr glutinous rice (ketan rijst)
    1/2 - 1 tsp salt
    400 gr grated coconut
    banana leaves
    50 gr palm sugar (gula jawa)
    soak the glutinous rice in warm water at least 1 hour
    defrost the frozen coconut
    prepare the steamer
    add the glutinous rice, let steam for 15-20 min
    after 15 minutes, loosen it up and transfer to a pot
    add the grated coconut
    salt and mix
    steam again for 15-20 minutes
    loosen it up
    transfer to a pot lined with plastic wrap
    wrap a pestle with plastic wrap and mash till soft
    place the clean banana leaf in the bowl
    coat with oil
    transfer to the bowl and press down to flatten
    melt the palm sugar with a little water and set aside
    add some salt to the grated coconut, mix and set aside
    cover the cutting board with plastic wrap and coat with oil
    coat the knife with oil
    flip the jadah over to the cutting board
    remove the banana leaf
    cut in your desired pieces
    arrange on a clean banana leaf and eat as is
