Then you serve it and add the meat with more juices.

I’ve made this dish many times, it needs to cook at least 8 to 10 hours for the meat and onions to fully meld together.
6 hrs, nothing more is needed
Not with a heavy lid. Probably 4 in a proper Dutch oven and the meat will shred apart

This was technically the 'campanello' (leg), however chuck roast or any beef you'd use for stew is a good choice.
