      He is soo wrong about the second part. These dishes clearly have influence from central Asia. The biggest Tandoors in The world are in Uzbekistan. Also Punjabi culture was always affected by Iran, Afghanistan and Central Asia since Punjab region bordered them. Its so shameful these nationalists guys are teaching wrong history on purpose. Most Indians didn't even eat meat before

      Most indians didn’t even eat meat before? Have you read any Sanskrit or prakrit book? One example do you know in mahabharat mamsam odanam or rice and meat is mentioned as a popular dish? Dont spread around your impression and politics if you don’t have knowledge

      @@guharup Those dishes are not modern dishes, all of these modern dishes Clearly came or have heavy influence from Central Asia and Mahabharata was written in Punjab and on Afghan border, modern day Pakistan, not in what is most of India today. Like I said Western parts of South Asia were always influenced by Central Asia and Iran

    Used to eagerly wait for the "Brunch" magazine every Sunday, and flip the pages directly to go to Mr Sanghvi's articles. They were my first lessons about how to understand and appreciate the nuances of cooking...the falvours, the techniques etc. What a cracker of an episode. The following will be my dream episode on Forkers: Sid & Shanky, Mr Kunal Vijaykar, the legendary Mr Vir Sanghvi and the OGs of food blogging, Rocky & Mayur. Team Forkers, pls make it happen!!!

    I love Vir’s no-holds-barred style here! He’s always seemed one deep breath away from dropping an f-bomb on TV, but holds back just in time. But with good food and company… he’s finally unleashed! Bravo!

    I was so surprised to see that authentic dishes do not have artificial flavors. glad people here prefer taste rather than how food looks. Eagerly waiting to visit Delhi for the authentic food i've been missing my entire life. And yes Delhi is the place to live ... coming from a guy living in Hyderabad.

    Couldn't expect more authentic and genuine cuisine. As you said Bukhara doesn't use broiler chickens for tandoori and other dishes too. We can see the difference in texture, colour and shine as well. Overall superb presentation and experience.

    Just like how chef JP Singh manages bukhara /peshawari etc. Chef Ajit Bangera who set up Royal vega in ITC coromandel /narmada etc etc and later on Chef varun mohan carried the mantle.

    but the most memorable dish was the potato one and but ofcourse the dal. All foreigners around our table seemed to think that as well. Everyone was reordering the aloo in spite of the plenty of meat options. Very heavenly.

    Being a regular at Bukhara since last 30 years, this is 1/2 truth. The 36 inch naan is unedible. It is a good photo on Instagram though. Also, Bukhara served Butter Chicken until a decade back. Then they stopped and took it off the menu.

    I've stayed at a lot of top hotels in India...and I have to say that if you want top quality Indian food in any city...with the peace of mind that everything is prepared to Western standards of hygiene...then ITC Maurya hotels are the ones to visit!

I have a very genuine question i see you reviewing the place but i checked zomato dining recently and there seem to be more bad reviews about bukhara's food standards dipping.       @@TheBigForkers Boss, I was working in Maurya in 1978, a year after the hotel opened. Anyone who was around at that time knows that it was Todar Mal who was the main man at Bukhara. Unfortunately he was not very educated and used to love his daaru. He had been brought in by the ITC team from The President Hotel in Darya Ganj. I have a lot of respect for Mr Sanghvi as far as his commentary on food is concerned but his knowledge on ITC and other hotels is based on what has been told by someone who heard it from someone else. Mr Sanghvi wasn't around when Bukhara came into being.

I have a lot of issues with Mr Sanghvi on his political views but this is much more serious - giving due credit to the to the person who made something like Bukhara to happen. I have had some very senior food professionals missing flights because they decided to drop into Bukhara on way to the airport.

      @@TheBigForkers I specifically stayed at ITC just to try Bukhara. I went 3 times, each time thinking that the "okay" dishes were likely a consequence of staffing issues. All 3 times the food was not nearly as good as NYC. Definitely try it.

    Bukhara oh Bukhara
    Bukhara has long been celebrated as one of India’s finest dining establishments, known for its legendary tandoori cuisine and impeccable hospitality. Unfortunately, my recent visit fell far short of its once-iconic standards.
    The tandoori kebabs, a hallmark of Bukhara, were disappointingly dry and lacked the succulence they’re renowned for. From the windows, it was evident that these dishes were pre-cooked, robbing them of their freshness and flavor. This shortcut is disheartening for a restaurant of Bukhara’s stature, where high-quality, freshly prepared food should be non-negotiable.
    To make matters worse, the management appeared to prioritize VIP guests over regular diners. While the VIP tables were attended to with great enthusiasm, the rest of us were left waiting endlessly for service. This imbalance created an unwelcoming atmosphere, as though we were an afterthought.
    The waitstaff, too, seemed more focused on soliciting tips than delivering the renowned Bukhara hospitality. Basic service was lackluster, with little effort made to ensure diners felt valued or attended to.
    Bukhara once set the gold standard for Indian dining, but sadly, it appears to have lost its way. It’s a shame to see such an iconic establishment compromise on both food quality and service. I truly hope they take steps to restore their former glory, as my recent experience was far from the excellence Bukhara used to represents
