Every way you go in China your camera speaks loud than words. its show clean and peaceful surrounding. China is really beautiful, and the people are friendly, with civilize attitude. No places on earth like China with a 1.4 billion population. Hooray China.
I love every bit of Xiamen. Went back there in 2015 with my parents to visit my ancestral homes just outside of the city where the tea plantation is. Really feel at home as we also speak a local dialect. Thank you for showing this beautiful city to me again.
ya, wit hhis dad,, go herbal natural, avoid sugar,, even fruits, or acids,, eat organic veg can get alot in china, home grown wherre its not laced with pesticides.. and also.. canabis oil probably wont get thatin China but it works.. just do not go chemo , cancer everyone has, but it turns into cancer when somethings not right withing the body.. HIGH ALKALINE and lower the acids,, sugar especially white process sugar is extremly bad for acids, and dairies ect. and as we know.. one thing LEE loves is sweet stuff.

Respecting the animal by using every part was very much the belief in rural England, exactly as you said. I think that these days most of the parts rejected by humans go into pet food. Pigs ears & rolled up raw hide are on sale as dog chews. In my childhood there were few urban house pets & no commercial pet food. Dogs & cats were common in the country & had "jobs" usually controlling vermin, They were fed scraps but were very healthy, rarely getting sick , lived to ripe old age when wormed regularly. Probably much healthier psychologically than cooped up indoors, getting bored. The problem for us, is that the meat on sale is the more expensive cuts, rapidly becoming less affordable, & younger people don't know how to cook them now.

As far as I know, Xiamen was never "controlled" by British empire like Hong Kong in any given time. I think you meant "GulangYu International Settalment", an area that was given to British Empire as a concession to allow de jure controll by the British, but not the whole city.

These 2 kids were raised in prosperity. They have never known real hunger. They had never been in a situation where they do not know where their next meal would come from. A dog, a cat, a rat would be food then. No different from your chicken or lamb or cow.
Across the bay to Haicang there are a couple older wet markets and even older and more traditional ones in Jeomie on the way to Zhangzhou. Here you can find anything ! Terribly miss it.
In the west they eat "recovered meat" which is made from the slurry (called white slime) blasted from the bones left over after the good bits have been taken off and then forced through a sieve to remove the bones. The psste is then mixed with some chemicals and flavouring and reformed into "chicken slices" or "ham" or used in sausages, etc. While you might imagine you are buying an actual boned leg of a pig, often they are really made from cuts from several different animals that are stuck together in a factory. Next time you buy a packet of chicken slices, check how much chicken is on it. Probably less than 90%. Chinese scorn such abominations, but is staple for many westerners. Disgusting!
I would love to visit China after seeing all your videos...... Its just so far away from the states here. Almost unimaginable. We view China here as an adversary by the media news outlets for so many years its hard to deprogram and think any different. Yeah, that hesitation to visit will be hard to overcome.

Main stream food vs. exotic. You do have a point. In U.S. mainstream is actually very limited, extremely limited. But we do have West Virginia Wildlife Cookoff and musk rats, iguanas...rattle snake round ups, rocky mountain oysters. Last year Black Bear was a hit at West Virginia but it was hunted not killed by a truck.
Hi, Oli, thank you again for this very short and sweet but informative video clip. In Seremban, Malaysia, where I grew up, there is a wet market with a similar set up. Well, it's almost identical because of the Chinese community in this part of Malaysia. I'm really grateful that this clip is again under 15 mins, just right for me to share with my schoolmates of Chinese descent but who do not read or write Chinese and also with my relatives in Guangdong. Just before the pandemic, we spent 10 days in Fujian. 2 days in Fuzhou, 2 days in Wuyishan and 6 days in Xiamen. It was August and the weather was unbelievable pleasant, with blue skies everyday except the morning when we rode the bus to Wuyishan, it rained. Xiamen is a beautiful city, clean and modern.
Brilliant video and what an awesome city! I was born n raised in chengdu and then been living in New Zealand for the last 20 years. I agree with what Ollie said the food choice has changed a lot through generations. Back in 80s, I tasted a piece of snake without knowing first from my neighbours. But even back then, snake is not something you see commonly at wet market. I remember those giant frogs 牛蛙 also were for sale every now and then. Fish head is REALLY delicious if it is cook RIGHT. 1) Curry Fish with all the right ingredients 2) Stewed Fish head with all the nice ingredients and usually a few pieces of fish meats are added depending on the type of fish head The best for me will be CURRY FISH HEAD with all the NICE ingredients added in. Yummy yummy ps: fish head MUST be a BIG one, the bigger the better. The gill must be removed & the EYES & cheek meat are the best part. REALLY YUMMY !!!!

When I was a kid, we were lucky to get a choice of food. The variety was probably rabbit or chicken, or lamb chops, vegetables from our own garden, and if we travelled to the coast or the city, having fresh fish was a treat, once a year on holidays. Now I love to get the chance to go to open markets. The scenery heading to the island is beautiful. I love the parks. Thank you for sharing.
Actually china has so many population in a large area so people from different regions actually have very different local cultures. For the snake eating culture, you can find them in Canton province while xiamen was localed in Fujian province. I am living in hongkong and the wet markets here have plenty frogs and snakes~ instead of call the people barbarian, i think it reflected the poverty and starvation happened several times in China's history. When people are hungry and dying, they will try anything that look eatable....

chicken breast is actually the least favorite part for chinese taste, first of all, it does not have an interesting texture, the consistency is kinda like softer version of cement, you will fall asleep when chewing them. Secondly, it is the least flavorful part of the entire chicken and it is just a big chunk of flavorless meat

Yes if you are going to kill a farm animal then every part of the meat is used and the offal bones etc used for fertiliser,not like cutting the fin of the shark and not eating the rest of the body
@@joe2395 I agree that shark fin is a rather vulgar one that ought to be banned - in all honesty younger Chinese these days don't fancy that 'delicacy'. Social awareness and public attitude can shift rapidly in China too - it would've been, for example, almost unthinkable to completely ban fishing in the Yangtze for 10 years if you were to ask people in the mid 2000s; now, it's almost common sense to support it for the sake of biodiversity restoration.

I think much of the fruit in supermarkets in the uk is picked weeks before put on the shelf, they whack it into cold storage until they need to put it on the shelf, the phrase “ready to eat” or “ripens in the bowl” make me laugh as some isn’t ripe or won’t ripen in the bowl 😏 Londons tube prices 😂 single journey is like £2:40 min but will rocket up if you come from further out and head into zone one. Now you’ve been there for awhile ( time flies right ) how you coping with the heat/humidity, better now ? Look after yourself and the old man 👊
Why don't you pick it yourself? We sometimes go to the farm to pick it for the sake of not losing nutrition. You know that some nutrition will be lost a few minutes after picking.

I think Asians in general Love the fish heads. As an indian i love the fish heads... In india in my particular culture (we Indians have like hundreds of different cultures each speaking different languages) there's a seperate recipe to cook a fish head, and come lunch or dinner time,every family will fight over the fish head 😂😂

Hope xiamen and fujian as a whole improves even more in the future where it can be on the same level as guandong/greater bay area or shianghai, it will only probably happen after taiwan-mainland reunification, my grandpa and all my other ancestors came from xiamen and the surrounding towns and I hope to go visit the place again.

Actually ,This place Oli showed is an only old market in Xiamen with a history of over 100years. Most of markets in Xiamen have been turned to be supermarkets just like Western city. This scene you may see in old street as well but rarely see now.

an important reason food are cut to small pieces is that small pieces canbe quickly got cooked under a big fire (where large portions are easily scorched on its surface and still raw inside) and they can absorb more juices & sauces. You may find some dishes are even cut into thin strips e.g. tofu, bamboo shoots
In My hometown PanYu Which is a district city of GuangZhou we do eat snake in winter. But it's not those snake you see in the wild it's more tiny and farmed in a way artificially. China is such a interesting place to visit Where people live and eat so differently to each other and that brings so much fun to explore. 因工作關係在廈門的會展中心附近住了兩年，廈門很漂亮，整體上已超越台北。
在廈門期間，生活上也會使用閩南語（台語），腔調不同，但溝通沒問題。
值得一提的是，當時也往返泉州安溪數次。我的媽呀.....閩南語安溪腔根本與台灣說的閩南語相似度有80%以上。
其實也沒什麼好奇怪，台灣的閩南人本來就全都是福建泉州漳州後代。

yeah I lived in Zhuhai and Shenzhen for over four years and people didn't believe me about China until i showed them photos(I am Australian).

Across the bay to Haicang there are a couple older wet markets and even older and more traditional ones in Jeomie on the way to Zhangzhou. Here you can find anything ! Terribly miss it.
In the west they eat "recovered meat" which is made from the slurry (called white slime) blasted from the bones left over after the good bits have been taken off and then forced through a sieve to remove the bones. The psste is then mixed with some chemicals and flavouring and reformed into "chicken slices" or "ham" or used in sausages, etc. While you might imagine you are buying an actual boned leg of a pig, often they are really made from cuts from several different animals that are stuck together in a factory. Next time you buy a packet of chicken slices, check how much chicken is on it. Probably less than 90%. Chinese scorn such abominations, but is staple for many westerners. Disgusting!

We view China here as an adversary by the media news outlets for so many years its hard to deprogram and think any different. Yeah, that hesitation to visit will be hard to overcome.

Main stream food vs. exotic. You do have a point. In U.S. mainstream is actually very limited, extremely limited. But we do have West Virginia Wildlife Cookoff and musk rats, iguanas...rattle snake round ups, rocky mountain oysters. Last year Black Bear was a hit at West Virginia but it was hunted not killed by a truck.

Well, it's almost identical because of the Chinese community in this part of Malaysia. I'm really grateful that this clip is again under 15 mins, just right for me to share with my schoolmates of Chinese descent but who do not read or write Chinese and also with my relatives in Guangdong. Just before the pandemic, we spent 10 days in Fujian. 2 days in Fuzhou, 2 days in Wuyishan and 6 days in Xiamen. It was August and the weather was unbelievable pleasant, with blue skies everyday except the morning when we rode the bus to Wuyishan, it rained. Xiamen is a beautiful city, clean and modern.

Brilliant video and what an awesome city! I was born n raised in chengdu and then been living in New Zealand for the last 20 years. I agree with what Ollie said the food choice has changed a lot through generations. Back in 80s, I tasted a piece of snake without knowing first from my neighbours. But even back then, snake is not something you see commonly at wet market. I remember those giant frogs 牛蛙 also were for sale every now and then. Keep it up with great videos Ollie and thank you for showing us Xia men.
Fish head is very expensive here now. I paid $40 for one in Canada last week, as expensive as a filet mignon.
Fish head is REALLY delicious if it is cook RIGHT.
1) Curry Fish with all the right ingredients
2) Stewed Fish head with all the nice ingredients
and usually a few pieces of fish meats are added
depending on the type of fish head
The best for me will be CURRY FISH HEAD
with all the NICE ingredients added in.

When I was a kid, we were lucky to get a choice of food. The variety was probably rabbit or chicken, or lamb chops, vegetables from our own garden, and if we travelled to the coast or the city, having fresh fish was a treat, once a year on holidays. Now I love to get the chance to go to open markets. The scenery heading to the island is beautiful. I love the parks. Thank you for sharing.
Actually china has so many population in a large area so people from different regions actually have very different local cultures. For the snake eating culture, you can find them in Canton province while xiamen was localed in Fujian province. I am living in hongkong and the wet markets here have plenty frogs and snakes~ instead of call the people barbarian, i think it reflected the poverty and starvation happened several times in China's history. When people are hungry and dying, they will try anything that look eatable....

I was in Xiamen (and Gulangyu) in 2010. Huge difference compared to condition now. No metro back then. Much better city now!

chicken breast is actually the least favorite part for chinese taste, first of all, it does not have an interesting texture, the consistency is kinda like softer version of cement, you will fall asleep when chewing them. Secondly, it is the least flavorful part of the entire chicken and it is just a big chunk of flavorless meat

@@joe2395 I agree that shark fin is a rather vulgar one that ought to be banned - in all honesty younger Chinese these days don't fancy that 'delicacy'. Social awareness and public attitude can shift rapidly in China too - it would've been, for example, almost unthinkable to completely ban fishing in the Yangtze for 10 years if you were to ask people in the mid 2000s; now, it's almost common sense to support it for the sake of biodiversity restoration.

I think much of the fruit in supermarkets in the uk is picked weeks before put on the shelf, they whack it into cold storage until they need to put it on the shelf, the phrase “ready to eat” or “ripens in the bowl” make me laugh as some isn’t ripe or won’t ripen in the bowl 😏

I think Asians in general Love the fish heads. As an indian i love the fish heads... In india in my particular culture (we Indians have like hundreds of different cultures each speaking different languages) there's a seperate recipe to cook a fish head, and come lunch or dinner time,every family will fight over the fish head 😂😂

My views is based on what i can see on the "surface". After all, there is no way one can see the "soul" of any given city by just visiting the place for a couple of days.
Hope xiamen and fujian as a whole improves even more in the future where it can be on the same level as guandong/greater bay area or shianghai, it will only probably happen after taiwan-mainland reunification, my grandpa and all my other ancestors came from xiamen and the surrounding towns and I hope to go visit the place again.
Hope u can make it when COVID 19 less serious! I was burned in Hong Kong and visited Xiamen few years ago found very good memory , want to visit it again if don’t need to be quarantined.
Actually ,This place Oli showed is an only old market in Xiamen with a history of over 100years. Most of markets in Xiamen have been turned to be supermarkets just like Western city. This scene you may see in old street as well but rarely see now.

an important reason food are cut to small pieces is that small pieces canbe quickly got cooked under a big fire (where large portions are easily scorched on its surface and still raw inside) and they can absorb more juices & sauces. You may find some dishes are even cut into thin strips e.g. tofu, bamboo shoots

In My hometown PanYu Which is a district city of GuangZhou we do eat snake in winter. But it's not those snake you see in the wild it's more tiny and farmed in a way artificially. China is such a interesting place to visit Where people live and eat so differently to each other and that brings so much fun to explore. 吃蛇也没问题，广东还有蛇餐馆，我姐就吃过一次。吃鱼翅汤也不少，吃狗的人也还是有的，只是固定的几个地方，不是多数人，不是普遍现象，但还是有的。我们不用完全否认，好像是什么见不得的错误一样。我觉得英国男生说的很好，其实也就是不同的认知而已。日本人还吃鲸鱼呢。
