Is potato starch better than corn starch?
I am not sure Brett, I don't normally use corn starch.
Potato starch are more readily available.
From what i've read Cornstarch ( Cornflour) can separate if used in a sauce , but Potato starch wont.
Ive got both but have used Cornstarch in place of Potato starch no problem , plus you can get Cornflour in all supermarkets in the uk , whereas i don't think i've seen Potato Starch.
I've bought it in Chinese grocery stores though.
I think corn starch can cook out. What I mean is that if you cook it too long then then the thickening doesn’t last so long.
That’s what I’ve heard but not sure if true. I buy potato starch from Amazon
Potato starch is more heat stable and doesn't make a sauce gummy or cloudy like cornflour does.
