Green bell peppers are unripe bell peppers. If anyone is having stomach issues with this salad, just switch the bell pepper to yellow, red or orange and that may do the trick for you. (I ate a bowlful of green bell peppers once many years ago before I knew about this and MAN it was painful...!) Oh! And you can remove a LOT of the salt from the olives by soaking them in clean water for some hours -- preferably 8 or 12 hours.
I have another you should try: diced raw beets, diced broccoli, diced or julienne carrots, diced red onion, fresh chopped garlic & parsley (optional); dressing: red balsamic, sprinkle of dill (to taste), and a splash of maple syrup to soften the tang from the vinegar. 😋
If you use mint instead of the basil and oregano, add some garlic and now it's a Lebanese type salad. Mint, garlic and lemon are fantastic together! If you add lots of fresh parsley it's like Tabouli, so yum!
Great video and yes we want lots more recipes please. I have been whole food nutritarian plant based ,no oil, sugar and crap for a year now and I feel amazing and have so much energy. My skin is glowing and clear so no needs for expensive face creams . Just saying !!!

This is silly, but in addition to the great recipe: I realized that your presentation/preparation style was also a useful insight (bowls, even for trimmings, all materials ready, and SPACE to work - which cramped space is not conducive to relaxed food prep).
hi! great greek salad! you can give your olives waterbaths to rinse off and draw out all the salt and oil and then store them in the fridge in a mason jar full of water.

Don't use the cutting edge to scoop up the veggies, use the back edge or a "food mover" (flat scoop for moving food, usually ~$5-6). Your knife will stay sharp for much longer. Watch the video again & listen to the scrapes when using the knife to move food. That's hard on the edge. It's totally worth it to invest in a good knife, but reserve it for cutting.

You just reminded me that I need to sharpen my knives. It's almost summer! Grow/buy some veggies and make some bomb salads and salsas and dressing/sauces. I am looking forward to melons for sure.

I like salt and at first thought it would need a tiny sprinkle of salt on top before eating IF I ate it shortly after making, HOWEVER I allowed it to marinate over night and OH MY!!! No need to salt at all! And you are right, even better after allowing to marinate overnight. So glad I waited, and did not cave to salting, I'm getting better at no salt :) Thank you! It's a keeper!

Excellent. Never liked cucumbers b4. Tastes like watermelon rind which even a a hog won't eat. But being WFPB for nearly 3 yrs, was looking for good cucumber recipe. This does it for me. Even my non WFPB friends in apt complex like it & have requested I make it again. Thanx.

Made this. Love it. Added some nutrient dense hemp hearts to make it more 'couscous' like. They don't go soggy.
Pearl's has a reduced salt black olive at Target. 70 mg soium vs. 110 mg in regular Pearl's black olives.

skip the onions and add some beans into that - you've got one of my favourite salads as well. (my fave being my creative tabbouleh)

Have you ever used WHITE balsamic instead of the brown? I find that my vegetables stay their true vibrant color using the white balsamic.
