  • Sun-Dried Lemon Pickle - Kerala Style | Dried Lemon Pickle
    Ingredients :
    Lemon - 2 kg
    Kanthari chilli - 300g
    Garlic - 100g
    Ginger - 2 pieces
    Curry leaves
    Coriander seeds - 2 tsp
    Cumin seeds - 2 tsp
    Mustard seeds - 2 tsp
    Dried red chillies - 10-12 nos
    Gingelly oil - 2 tbsp
    Asafoetida - 1 tsp
    Turmeric powder - 2 tsp
    Fenugreek powder - 1 tsp
    Salt - 2 tsp
    Sugar - 1 tsp
    Vinegar - 1 tbsp
    Method :
    First collect all the kanthari chilli from the backyard
    Now wash the lemon and dry it by wiping with a cloth
    Then cut the lemon in to round thin slices
    Then add salt in to it and marinate
    Make sure all the lemon pieces are marinated
    Then place a banana leaf and spread the lemon pieces in to it and place directly where we gets sunlight
    Then let it dry under sunlight
    Then wash all the kanthari chilli and marinate with salt and spread it about the lemon pieces and let it dry under sunlight
    Then peel ginger and garlic and wash it thoroughly
    Then cut it and take some curry leaves along with it and set it aside
    Then heat a pan and add coriander seeds, cumin seeds and mustard seeds and roast it and remove from pan and let it cool
    Then roast the dried red chillies and set it aside
    Then heat gingelly oil in a pan and add asafoetida, then garlic, ginger and curry leaves then fry it till it becomes golden brown
    Then remove from the oil and set it aside
    Now grind the dried red chillies with coriander seeds, cumin seeds and mustard seeds in a grinding stone and set it aside
    Then grind all the fried items, asafoetida , garlic , ginger and curry leaves in the grinding stone and set it aside
    Now take the lemon out of sunlight and separate kanthari chilli from the lemon pieces
    Then heat oil in a pan and add the dried kanthari chilli and fry it
    Then add the masala mix we grinded earlier
    Then add turmeric powder along with fenugreek powder , salt and sugar
    Then mix it well
    When it gets dry add the lemon pieces and mix well
    Make sure all the pieces gets the masala mix properly and add vinegar and remove from fire
    Sun dried lemon pickle is ready to be served

    Now THAT's Fire in the Belly - I've tasted and enjoyed the commercial version of this, and can only imagine how many hundreds of times better this village cooked one would be!
