Bivalvia have very primitive nervous system, and their sensory organs are even more primitive. They probably won't even feel they're being sliced... They could, possibly, sense the change in water's temperature, but since there's no nervous stimuli observed in the process, it seems these creatures don't have the ability to feel pain at all. Most of then are ok even for vegan consumption.
