Glad you like them! Our dark soy sauce is from Kwong Cheong Thye. You can either get their best grade dark soy sauce or chicken rice dark soy sauce. Hope you can find them.

When you split the back opened, it will have better taste because the sauce will have contact with the prawn meat instead of just the shell. Removing the vein is actually more for texture, the vein sometimes contains Sandy particles.
