Cotija cheese or queso fresco, as a Mexican American those are the best to go into a taco. If you want to make a “stake” taco it’s not that deep. You can get a good cut of carne asada meat and the only thing you need tbh is just salt, not all this extra bs lol salt cook it in a pan with oil for a few minutes, make a salsa verde on the side and have tortillas and some freshly chopped white onions and some cilantro. You can make a very great salsa verde easy, depending on if you want a char or boil, you can boil some tomatillos and onion and blend it with some garlic and salt or use Norsuisa instead of salt and optionally you can add freshly chopped onion and cilantro in at the end to the salsa it just won’t last as long in the fridge, and you don’t want to add them while the salsa is still hot because you boiled it. People over complicate dishes sometimes also, making all this can take like 30 min max tbh and it’s extremely delicious. Also with Mexican foods people even other Mexican families ik are always so scared of garlic, DO NOT BE AFRAID OF GARLIC, if anyone ever tells me to add a certain amount of garlic I double it because it adds a great flavor

I use Feta cheese for my tacos because i can't find good cotija or queso fresco options in Alberta, CANADA 😢

Ready for the mighty boosh not so much for Mexican week on the British bake off especially when they making tacos and not tres leche cakes or other delicious Mexican things that need to be baked .
