Dusted the cobwebs off the bbq and gave this recipe a try tonight. The steak turned out great the compound butter made it perfect grilled the bread slapped some carrots on the side. DELICIOUS

The steak is absolutely gorgeous, I learned a new thing by flipping it over every minute. I was wondering why sometimes my steak ends up medium well when I wanted medium rare. However your jalapeños garlic butter gave me a chance experiment on a grill salmon for my wife's birthday in 10 days. I absolutely enjoy your videos. Thank you for good cooking and good food.

I used to be on the “only flip it once” bandwagon. Then I tried it the way that Sam does. Those steaks were the best cooked that I’ve ever had at home.
@@ActingTanka Nope, Sam's steak looked really good. But perfect? Sous Vide, then a single flip with 90 second a side on a super hot grill. Once you've had a Sous Vide then seared steak it's really tough to go back to any other method. And if you like the smokiness from a charcoal grill, you can use a Smoking Gun Pro after or cold smoke it for 15 minutes. And this is my personal preference, but a griddle top gives you a much better chared crust than grates. The grill marks from a grate might look more appealing. But an even sear across the entire steak is primo when it comes to texture and adding extra flavor imho. The down side is a steak like Sam cooked would take a good 2 hours minimum just for the Sous Vide part. But the tenderness cannot be duplicated with any other method of cooking, so it's worth spending possibly 3 hours to make a steak imho.

One thing I do know, this past year the episodes have been some of the best of any channel I’ve watched. You guys constantly improve with every episode provide pure entertainment while being authentic to who you are. Y’all deserve it.
Flipping every minute is the correct way to do it. You keep the juices in the center of the meat. The most expensive steak I ever ate was cooked by a chef from Ric's Grill in Calgary Alberta and he personally told me that, and the $1000 Kobe rib eye was excellent. I have used his method ever since and have never had a complaint!

I suspect that the difference in the approach to steak comes from the thickness. I'm guessing a relatively thin steak letting it cook on one side and then turning it only once works, because it means the sides sear in less time. Whereas turning it multiple times means that it can be on there for longer while the sides still aren't seared properly because the heat cools down a bit on one side in between. And so it has more time to cook through if it's very thick (which this one is).
