    Mochi made by an old couple
    "Tteok" is a traditional food that Koreans have enjoyed since ancient times.
    It is one of the foods that are not indispensable to the holiday feast.
    Mochi is a general term for food made by steaming or crushing rice or other grains. In general, rice is used as the main ingredient, but potato starch or other grains are used, and various kinds of subsidiary materials are added to add taste and shape. It was developed in areas where rice is the staple food, mainly in Southeast Asia and East Asia. In Korea, a lot of rice cakes are eaten at feasts and festival events such as holidays and ceremonial occasions.

    벽이 저렇게 낡은 이유는 아마 오래했고 그 만큼 장인이란 뜻이겠죠? 님들이 저런곳에선 안먹는단 그 한마디가 저분한텐 상처가 될 수 있어요 신경써서 말해봅시다~^^

      장인이면 낡고 지저분한곳에서 음식을 만들어도 세균박테리아가 피해가나요?
      음식만드는곳은 그런걸 더 신경써야 하지 싶어요. 그래야 장인의 손길이란 말이 더 빛나지 않을까요?

      All the powder is sweet rice flour. The grain is first soaked, then ground. It is then probably sweetened with sugar, though I think honey or some sort of syrup is traditional. Then you can see the red mung beans (a type of red bean) in some of the fillings. The red mung beans look brown cooked.
      The yellow filling is mung beans. The orange bits is pumpkin. You can also see in the mixed filling (4:44) some black beans and white slices of chestnut. There are also some green legumes of some kind I can't identify.
      At about 12:17, you see all the above. Then the lady tops it off with sliced almonds, pine nuts and sliced dried jujubes, Korean dates. Korean dates are not super sweet like Mediterranean dates and is not nearly as sticky. They have an apple-like flavor and texture when fresh.
      At 5:54, the lady is making bak-sur-ghee, a plain sweetened rice cake. The name means "white snow cake" and signifies purity. It is traditionally served at a baby's 100th day birthday. She is using red dyed rice flour for decorative effect. I think grape skin might be the traditional natural dye.
      At 16:40, the brown cake is called "yahk-shik" and is made of whole grains of sweet rice flavored with cinnamon. The name means "medicinal food" because it was traditionally believed to be salutary. The brown color comes from carmelized sugar. She appears to be removing whole chestnuts, which she then slices and places on top. Then she sprinkles pumpkin seeds, sesame seeds, jujubes and (I think) raisins, which is not traditional.
      At 19:30, there are some red-mung-bean rice cake balls boiling. The lady then rolls it in cooked red mung beans.
      I'm not sure what are the green pea-like things. Traditionally, mugworts are used for green coloring in Korean rice cakes. It is a slightly bitter herb and is used in both sweetened and unsweetened cakes. You can see some flat unsweetened mugwort cakes to the right at 8:03. But the green pea things, I don't know.

    I'm amazed at how you guys make magic with the most basic tools, a knife, a flat sided scraper and a spatula. I've got way too many overpriced kitchen utensils and my stuff still looks like a 3 year old with a Suzy Bake Oven. lol

    Hello! Nice video. I have a question i recently bought Baekseolgi (백설기) but it was stored on a freezer. How can i heat it or cook it, make something with it? I'm really confused. I couldn't understand the instructions from the owner of the store because she speaked other language. Can someone help me?

      I'm pretty sure you can steam it. But, likely, you can microwave it, too. Just lower the power and check every 20 seconds or so.

      You're very welcome. I don't know what else you could do, but if you have a burner/stove, you could make a steamer of sort.
      Get a wide bowl, ceramic or metal or earthenware, that will fit inside a pot/pan. Then pour some water into the pot then place the bowl inside the pan/pot.
      If you have something like chopsticks or barbecue skewers, you can lay them in two layers (in 90 degree angles) over the bowl so that you have a surface for your cakes to lie on. You can place a cheesecloth or a banana leaf or some lettuce on top of the chopsticks for more support for the cakes. Then you can cover the pot/pan and steam like you would with a steamer.
      If you have no chopsticks or skewers and you don't have thin sticks from a tree you could use, you can probably use some knives or forks or anything kind of flat. Just use your imagination.
      I hope you'll find my suggestion helpful.

      영상보니까 그냥 둘다 똑같이 맵쌀가루찌는건데 팥을 넣나안넣나 차이같네요. 두께가 달라서 식감만 다른거같아요

    전직 떡쟁인데 이런 영상보면 아쉽습니다. 비닐이나 브러쉬는 커버 가능한데 벽 상태가 에러네요. 약 10년 전 오픈한 떡집만 해도 벽을 스텐 판을 붙여서 만들었기에 위생적입니다. 창문이 열려있는 것도 문제에요 햅섭 허가 받으려면 창문 있으면 안되죠? 왜 없을까요? 브러쉬도 문제는 없지만 오해 여지를 남기지 않게 실리콘 브러쉬 사용하는게 어떨까 싶네요. 음식 맛도 중요하지만 퍼포먼스도 중요합니다. 떡집이 이제 사양산업이죠. 제가 일할때만해도 떡집이 빵집보다 적었지만 시장 규모는 커서 나눠먹는게 많았는데 이젠 아닙니다. 작아지고 있죠. 무겁다고 플라스틱이나 나무 쓰지마시고 스텐 쓰시고 좀 불편해도 실리콘 쓰시고 아깝더라도 시설에 의상에(옷차림) 투자하시길

      저도 떡집에서 일했었는데 이젠 저런 오해 받지 않게 실리콘제품을 썼으면 하네요.최근 떡집은 벽도 스텐판을 붙여서 위생적으로 관리하는데
      여긴 제가봐도 좀 그렇네요 5년마다 시설 개보수 해야한다고 봅니다.
