My Italian mom would sweeten the ricotta cheese with sugar. The sweetened ricotta would add tremendous contrast in flavor with the GRAVY! Not too much sugar. Our dinner guest were amazed at the flavor!

Been making stuffed shells for 45 yrs... never thought to do it this way with the cheeses. I usually mix mine in with the ricotta. I can't way to try it Joe's grandmother's way. :o)

I have been practicing as it is a new recipe for me, and I am getting better, and I LIKE your method and video presentation. what are your suggestions, should I freeze them, or prepare the day before and just refrigerate.
Freeze. Use parchment paper. Make 30 to 40 a day. Make sure you keep them frozen and put them frozen into the oven or they will thaw and get soggy and sticky.
