My Mom will be 80 years old this November she remembers when she stayed with her Grandma they always had pinto beans with every meal you must know that my Great Grandma went through the depression I think they had beans because sometimes that was all they had. Pinto beans are cheap and I are packed with vitamins, fiber, iron, and protein if you cook them right you will love them! Me and my wife planted a garden this year we live in a hot and dry area West Texas we planted black eyed peas they have done so good they love the heat I learned they came from Africa they have done so well this year next year that's all we are planting Next year is black eyed peas and peppers. Maybe a few tomatoes. The black eyed peas flesh with a couple slices of bacon and cook to done! man they are so good, very high in vitamins fiber iron and protein! We are going to start trying to add some spices, peppers onions, but just with a couple slices of bacon so so good and good for you and cheap? I grew up eating pinto beans as purée over white rice for lunch preferably and you près oak it the night before to make it softer and you rince it and then boiled it and add garlic 🧄 powder and salt and Tablete salt 🧂 and add some onion 🧅 crushed and added a little bit of vegetables oil while boiling and taste from time to time until your desire cooking and of course very soft and tender ; let simmer and voilà over white cooking rice 🍚 and some juicy chickens or beef 🥩 or 🐠 stew; and thank you for sharing sharing your way of cooking them, too!
I must say. You did your mother proud. Grew up on those soup beans. As a young boy. I would be “ shewed away from the table. I just couldn’t get my fill of beans and cornbread. Then throw in that garden onion. Now that I’m older. I appreciate that southern staple. Iv had the luxury of my mother make it for me on occasion. Had my dad’s cousin make me a pot. I soaked the beans all day, boiled them this evening, and just put them in the crockpot with butter and some ham from the freezer. Simple. Maybe in the morning I'll make some biscuits. Yeah as a child we needn't ask what's for supper. It's was always pintos , fried potatoes and biscuit. Sometimes with gravy an pork chops , speggi, meatloaf ect but always beans potatoes and biscuit or cornbread.
We had eight kids in our family. And were very poor. One of my most precious Sunday memories: We'd get our baths. Then watch Wild Kingdom and World Of Disney. Mom would make biscuits and cook up about 10 packets of Wyler Bean Soup Mix. So wonderful.

(The north is also known for Northern Toilet Tissue, btw)....and I must tell you that they were the BEST beanies to come from our kitchen. Your concoction worked SPLENDIDLY. I would urge anyone reading my imperious sounding words to have a go at it percisely as laid out here. And be sure to lay in 3 slices of good salt pork for the meat. Wow!!!! I thankee! PS... That is funny what she said about not wanting to eat another pinto bean as long as she lived.I said the exact thing when I left home at as he 17.I can safely say I had beans every day growing up.But today I love them and eat them frequently.
I'm surprised to see the initial water drained and rinsed. There's some good flavor in that liquid but you mentioned you don't like beans with a strong flavor so that makes sense. I always keep that so it all thickens up.

I'd use an entire Serrano Pepper, chopped up, or even Jalepeno Peppers for both heat and flavor. I also add Chopped yellow Onions......along with pork.
If you want beans that don’t give you gas, pour boiling water over sorted, cleaned beans and let sit for 15 min. Drain but DO NOT RINSE. Cook as desired…no gas!
We had pintos several times a week they were only washed one time put in the iron pot with a chunk of fat meat and salt on the wood stove washing them takes the bean flavor away they are the best putting all the other stuff takes the bean flavor away my opinion

I made these this past weekend and they were great, I added some fresh roasted hatch chilis and added a nice heat level and flavor.

one thing your mama never taught you is to only use hot water to rinse or add to a pot of beans,,, cold water will cause the beans to lose there skins
