I recently started juicing. I use 1 bunch of kale, 1 bunch of spinach, 3 cucumbers, 4 stalks of celery, 1/2 pineapple, 4 small or 2 large green apples and 2 lemons.

Your daily protein requirements are dependent on your goals and current health status. According to the Academy of Nutrition and Dietetics, who have already done the calculation, the daily protein requirement for women ages 19-60+ is about 5 to 6oz where 1 oz equals 28g. The Recommended Daily Allowance (RDA) is based on body weight where the daily recommended protein requirement 0.8 grams of protein per kilogram of body weight (for a 150 lb woman that is about 55 grams of protein per day). The International Society of Sports Nutrition's recommendation for athletes is about 2g of protein per kilogram of body weight to support muscle gain and maintenance (for a 150 lb woman that is around 135 g protein per day). The most common problem associated with consuming to much protein is weight gain, especially in the absence of exercise. Consuming too much protein for an extended period of time can increase the risk of diabetes, kidney insufficiency, osteoporosis, heart disease or cancer; especially for those already at risk. Check out the Academy of Nutrition and Dietetics for more information or consult a dietician or nutritionist depending on your medical history.

roast the carrots by themselves, olive oil n some seasonings mix carrots n olive oil plus seasoning bake at 380 for 35- 50 minutes, carrots begin to take on a meaty texture n taste great

Lime and mint are the perfect pairing. For green juices I also like to add dandelion greens, parsley and I switch up the fruit and add pears sometimes. My favorite juice is probably beet juice using red or golden. Sometimes I add greens and usually an apple. Carrots and beets are great and so is carrot juice itself, with tumeric.
A juice hack for those using a blender is to freeze greens, garlic, tumeric, celery and carrots, blends much easier and produces a smoother juice.

Love the tofurky ham! Usually slice up some violife or follow your heart cheese with it and put them on crackers or pretzels for a snack

Loving the meal prep
Pineapple makes a huge difference, honestly any citrus type.
I do:
Pineapple
Oranges
Green apple
Celery
Cucumber
Spinach or Lacinato kale aka dyno kale
You of course can add ginger, turmeric and carrots. That will make it taste like a completely different juice.
Look up a beet juice too. It’s pretty and is a whole new taste.
Fully raw Kristina makes a lot of juices.

i love “s.t.o”seasoned croutons they are my favorite. i really enjoy miyoko’s cashew milk mozzarella as well. im not vegan but i do eat many plant based/vegetarian meals. most of everything i eat is organic or non gmo.

I make my carrot lox by using a potato peeler to make very thin raw long strips. You can parboil these for a few mins but i don't. I just marinate it for a few hours and use it out of the container. so YUMMY. Thanks for the fun vids

Never had mushrooms before....
Love your meal prep! Oh howI wish I liked mushrooms (or eggplant for that matter), lol. Those bagels looked SO good! I like the idea of making the cream cheese because it’s made with simple ingredients with no chemicals or things you can’t pronounce - even it doesn’t taste exactly like cream cheese.
Not sure if you like or ever tried to make your own hummus but I do every week either from canned chickpeas or from scratch with bulk chickpeas in the Insta-Pot. It can be a little time consuming from the bean (or pea!) but it’s worth it either way!

Kitchen Basics unsalted vegetable broth, it is so rich and flavorful. It is my favorite preferred go to and is unsalted.

I always crush my croutons (in the bag). Those things are NOT bite size as they come... they will destroy the roof of your mouth! Lol. Crushed croutons is one of the salad hacks that got me eating them more regularly ☺

Your meals are so inspiring. I will say this is my 3 week on this journey and I’m very proud of myself so far; the journey has been real. I can’t find half the ingredients that I need at the local grocery store.
Therefore, I have to venture out to Whole Foods and some farmers markets. It can be a bit discouraging in the beginning but I’m going to ride it out.

A potato peeler works well when trying to thinly slice the carrots
