Big fan of KISS (keep it simple stupid) the best EV would be one starting with an oversized golf buggy. Basic electrics and electronics, no big fancy computers or rubbish like self driving modes and the lights, cd player and the like you can find at any aftermarket auto store and things like the body can be made from hemp and composite materials.
