I made this too! It's phenomenal! I need to make my own Tortillas next time. I also used an alternative avocado sauce which had a bit more depth. But yeah, the marinade was phenomenal.
The pastor was absolutely amazing, specially the way he tried to emulate the trompo. I don't mind the tortillas, specially because that's basically the best you can get in the US, all store bought tortillas over there are trash compared with the ones back in Mexico. I am mexican and i live in México and i can tell you those tacos al pastor look like the best I've eaten. And for some facts, actually tacos al pastor were invented by Arabian people when some migrated to Mexico , they adapted their dishes with the spices of the region and pork meat because lamb was hard to find and to expensive in our country and that's how they came to life. I don’t think there can be a set time for preparing it. Due to the way the meat is assembled and shaved for eating, a set time might lead to some parts being more cooked than others. When I do this I’ll just monitor the meat every so often whenever it’s time to make another batch of tacos. Hope this helps.
You would just need a meat thermometer to know when it’s done

We have then in Yucatan, they are pretty distinct from lemon and lime and sweet oranges. We also call them sour oranges because of the sour taste, they don't sweeten when ripe.

Mr. Brandon Nah bruh, it depends on where you live. Here in Texas, we put green or red sauce(salsa verde with tomatillos or salsa roja) on our tacos. The green sauce is usually has a good deal of jalapenos so it's kinda spicy; it's my favorite.
Jacob Flores I’m also from Texas and I can assure you the green is not mostly jalapeños - it gets that color from the roasted tomatillos, also where that sauce gets it’s initial tanginess from. As far as heat I have seen it (and made it) with a variety of peppers - just depends on how much heat I’m looking for. You can also roast the peppers for a smokier flavor. You’re welcome

And for some facts, actually tacos al pastor were invented by Arabian people when some migrated to Mexico , they adapted their dishes with the spices of the region and pork meat because lamb was hard to find and to expensive in our country and that's how they came to life.

This recipe is excellent- simple and perfect. The sauces are great but it is the meat that stands out. I have been looking for a good taco al pastor recipe that rivals the Mexican restaurant close to my house. This is better. Man I gotta go to Mexico.

Si bien yo considero que los tacos al pastor van mejor con una salsa que no sea cremosa (porque es mi gusto personal)pero la cocina se hizo para experimentar y salirse de los parámetros comunes. Si Guga decidió experimentar/añadir mayonesa a la salsa esta en su derecho. Es cuestión de gustos personales ademas de que el es cocinero experimentado y no dudo que tenga un sabor bueno.

Just cook until the outside peices are cooked. Your not supposed to wait till everything is fully cooked. Look up " tacos al pastor en trompo"
Also cut the pine apple edges vertically when you put it on top more juice will leak out while it cooks
What temp to cook in the oven and for how long?
Relatively high, 400-430 F if you want to shave meat off as it cooks. If you want the whole thing to be done at the same time, then 340-370 F.

I don’t think there can be a set time for preparing it. Due to the way the meat is assembled and shaved for eating, a set time might lead to some parts being more cooked than others. When I do this I’ll just monitor the meat every so often whenever it’s time to make another batch of tacos. Hope this helps.
You would just need a meat thermometer to know when it’s done

We have then in Yucatan, they are pretty distinct from lemon and lime and sweet oranges. We also call them sour oranges because of the sour taste, they don't sweeten when ripe.

In México we just cook the meet till de edges aré well coked then "shave them". Then you wait for the new edges to cook.. just like that till you get to the Center.

Well I made this tonight and after a little while it wouldn't stand upright anymore. I took it apart and just grilled them a little longer to get them charred and everyone was happy
I dont really know how much Time It takes but i've seen the "taqueros" doing It like that, also they use a whole metalic structure to stack the meat but Yeah just grilling It Will do... Hope they were great !

Mexican Tip; If you soak the tortilla in the pastor juices (not all, just a little bit on one side) before cook it in the pan, uf that takes the things to another level. Nice tacos btw.

Mr. Brandon Nah bruh, it depends on where you live. Here in Texas, we put green or red sauce(salsa verde with tomatillos or salsa roja) on our tacos. The green sauce is usually has a good deal of jalapenos so it's kinda spicy; it's my favorite.
His Brazilian and doesn’t like spicy stuff like us Mexicans so he substitutes chilies with mayo. I get it but it’s not my cup of tea.
Jacob Flores I’m also from Texas and I can assure you the green is not mostly jalapeños - it gets that color from the roasted tomatillos, also where that sauce gets it’s initial tanginess from. As far as heat I have seen it (and made it) with a variety of peppers - just depends on how much heat I’m looking for. You can also roast the peppers for a smokier flavor. You’re welcome
