  • Here is how I make my weekend overnight no knead bread using dutch oven. The process, if managed well, is extremely simple and never fails. I bake this no knead bread every single weekend. It tastes like a great rustic bread from a fancy bakery. But it is better cuz you made it fresh by yourself, you know what you added = all wholesome ingredients (and very few of them).

    Ingredients
    - 3 cups bread flour (or all purpose flour) (400g)
    - ¼ tsp dry active yeast
    - 1 tsp sea salt
    - 1 and 5/8 cups water (300 g)

      @@MyFavoriteFWord I want to try this recipe of yours, in your video and on your ingredient list you say to use 1 teaspoon of sea salt, but in the video you put 3 of those teaspoons of salt in the recipe, should I use 1 or 3 teaspoons of salt?

      @@Deathicu I am using 1/4 tsp (spoon), same as what I used for yeast, thats why you see 3 tsp going in. I use about 1 tsp of salt, you can use a bit more if you would like. Once you make the bread you will know if you need more or less.

    This is by far the best no knead bread,there are many no knead recipes, same ingredients,but no overnight rise,which makes all the difference in the final product.This recipe is far crustier,and lighter,airyer,than others! So glad I found you! Thankyou so so much!

    Great video! The 2nd rise is a must. Most other No Knead recipes skip this step. And I replace some of the all purpose flour with a small amount of Dark Rye flour. It provides the best texture, and you can't taste the rye. For more savory, add chopped olives and parmesan cheese! Yum

    This is the best no need recipe I've tried so far. My only problem wasusing the wax paper instead of parchment paper
    update: I honestly don't know where I got the idea of wax paper, I thought it was in the video I have watched it over now a couple times and it's not in there! Dope!I really like this recipe and I'll do it again this weekend. Forgive my earlier conclusion., And I'll just follow the recipe better this time.

    Wonderful, thank you for sharing. I usually make breadcrumb, stored in freezer bag. Use up to 1/4 cup to recycle back in the next loaf by soaking in hot water. Use part or all of the soaking water as the dough hydration when cooled.
    Oh fyi if using all purpose flour reduce water 280g (70%) or less

    Great simple recipe. Thanks. Only just starting making my own bread and this was the first one I tried. To good. Just one thing. 1 cup of water is 250ml so that is 250 grams so 1 and 5/8 cups would be closer to 450 grams roughly. Thanks again.

      you can play with water amount. less water = denser bread, more water = ciabatta like bread but harder to deal with. 450 is about right

    For 2nd rise; lightly wet counter, place parchment paper on it, then lightly oil paper to set dough. Using spatula pull sides onto dough rotating bowl until all sides pulled away from paper. Place back in bowl until rise finish. Also add a few cuts across top of dough before baking.

    I redone this recipe several times, with some modifications too. I think the leftover bread is a great excuse to make a homemade Caesar salad with croutons ( the bread). I especially use the end of the bread or the smaller parts that are not so nice for a sandwich. And this salad per se it's something that tastes nice only homemade. The proper Caesar salad has nothing to do with what they serve in restaurants.
    Update: this is the bread that I'm doing every week for the last months.

    Beautiful beach walk while the dough rises the second time in the early morning. It looks like the sun is rising (so East coast?) BUT there are palm trees (so California?).

      No egg wash or butter, covering up the pan at the beginning will give you this golden color

    What do you recommend I substitute if I do not have a big tupperware bowl with snap on lid? I hear another version of letting it rise in a glass bowl with clear seal wrap & a damp tea towel (for the rise period). Thank you for your feedback.

      Recently I forgot to set up the timer and left the lid on for 35 minutes. And it was also great, so it doesnt matter, the bread will be crispier, just watch it, so it doesnt burn at the bottom. I also started putting the bread in the pot to the oven while the oven is heating up. Feel free to play with the process, and see which option works better for you

    Breadmaking = ingredients (very similar per recipe), amounts and technique. 1⅝ cups water = 390 grams, not 300gms. So which is correct? Thank you.

      not sure, I do play a lot of with the amount of water I add because it changes the texture, density of the bread. It is almost impossible to mess it up so start with the original recipe and adjust to your liking. The more water you use the lighter the bread will be, the less water - the denser the bread

    I'm curious, why didn't you cut the top of the dough after/before you put it into the Dutch Oven
    before baking? Wouldn't it rise a bit more & give that Artisan look? Just asking. I've never baked
    bread before & want to start.

      It would be a better effect. It is just laziness on my side. I do not like to bother with the step as it gets messy for me and the dough sticks to my knife so I just skip it...

      I only use it so I can cover the bread up and let it rise and also keep the shape of bread (it is a very runny). See if you have any pot or container that is oven safe and can withstand very high temperatures, or you can make baguettes: th-cam.com/video/uE0B7CbNBDw/w-d-xo.html

      I used to make 4 baguettes out of it, until I realized I can make it easier with the pot. So you can make the bread without the pot.       67 per 1 oz (28g) slice. I weight it after I slice it and multiple by 67 depending how big of a piece I cut

      Yes I have, it gets rid of the very dark spots but not the brown. I do not clean it with vinegar every time I use it, only when it gets very dark

    I had to give it a try, dutch oven , not enough yeast and all.
    This tasteless, overly dense between the holes lump is Bread? I've been baking real Bread once or twice a week for longer than you've been alive and this isn't it. Bread has texture, flavor, color, and a crust sometimes crunchy, sometimes chewy and which often surprises. If you think this is bread, my sympathies.
    Oh, and by the way, I haven't done any kneading since my seventieth birthday, Kitchen Aid does that.
