A long time ago a friend from England turned me on to a recipe in which golden raisins and apples were used as a thickener. To my surprise, I liked it and did it like that for years afterwards. It is only recently I have gone back to the Trini style. I do like a thick sauce!

Just a little but it is worth the try...not overpowering. It does the same as adding sugar to pasta sauce or Chinese sauce mix. @@caribbeanpot
I did see the recipe in an English cook book. You may find it in a google search "curry chicken apples sultanas" for the recipe. Sultanas is California golden raisins.

The name of this game is "Patience" to get to the point of thickening. I do this for all my stew and curries!
somewhat.. if you don't do the steps correctly patience will only yield overcooked mushy chicken.
