How to make Rice Burger with HIKAKIN

  • So finally I fished editing! How do you guys like HIKAKIN's beatbox intro? I think this is the best intro I've ever got so far. Please check out his channel just in case you don't know him. And I'd like to thank to everyone who took a part in this collaboration video. I really enjoyed editing everyone's clip!
    Ingredients (Serving 4 - 5 )
    :200g ground chicken
    : 80g minced onion
    : 1 tbsp sake
    : 1 tbsp soy sauce
    : 3 tbsp panko (Japanese bread crumb)
    : 3 tbsp corn starch or potato starch
    : 1 tbsp ginger juice
    : 1 egg
    : salt & pepper
    Teriyaki sauce
    : 3 tbsp sake
    : 2 tbsp soy sauce
    : 1 tbsp mirin
    : 1 tbsp sugar
    Other ingredients for topping
    : Green onion for Shiraga-negi
    : Shiso leaf
    : Sesame seed
    Of course RICE!

    If you can't find Japanese rice try to find "sushi rice" in your local supermarket (if there's an Asian ingredient section you could try to find them along with soy sauce & other Asian seasonings) or in Asian food stores. It's basically the same thing or at least similar short grain rice that's more starchy and will stick together better. if you really really can't find them, buy the cooked rice from a Japanese restaurant and u can still make the burger at home. 2 bowls(servings) of

    @LadyLatias No, I actually used Botan Calrose Rice that I got in the Asian section of the grocery store. I use this kind of rice all the time in my rice cooker. I just can't make it stick together to make onigiri. :( I rinse the rice several times before cooking it. Maybe that takes too much starch out, and maybe it needs the starch to stick together?

    @balletdancer247, it's japanese short-grain rice, you can also find it under the name sweet rice i think. you could use another short-grain rice like arborio (which might be more available than japanese rice). Japanese sweet rice is what they use to make sticky rice, and a special preparation is what makes it "sushi rice" (I think they add vinegar after cooking?)
    you could also use plain long-grain white rice in a pinch, but the taste/texture will be different.

    Rice burger is quite known in Japan. I just made it more in Japanese style lol Shiso aroma, shiraga-negi texture, teriyaki flavor, and sesame flavor rice patty... You can enjoy every one of each taste only in one bite!

    If you took some gluten-free bread slices (do they make that?) What you would want to do is use a grater to grate large flakes of the bread. Then LIGHTLY toast the bread flakes. OR let them dry out a bit. That will give you the same consistency as panko. Because really, the only important thing that makes panko special is the thick, coarse consistency of the crumbs. It gives a delicious texture to fried goods. So do that, and you'll have made yourself some fine, gluten-free panko!

    @AnnaMayEyes Westerners tend to use or buy long grain rice, which is near IMPOSSIBLE to make onigiri with. Try and buy a Japanese shortgrain rice, it sticks together a lot better.

    hi there, I don't know which part of the US you live in, but at least in california I know that most stores carry mirin in the "oriental/asian" aisle. the one I bought is called aji-mirin and it's the kikkoman brand.

    This looks awesome! I love Japanese food! They don't serve Japanese food like these in Japanese restaurants in the U.S. They mainly just serve seafood or ramen. So unfortunate :(. I have to make these myself to try it.

    These came out so good. I had to make it in two different one with onion and one with out (for my picky eater who doesn't like onion) but they where so good. And I couldn't find a shiso leaf so I used spinach but it still was really tasty. Thank you Runnyrunny!! ^.^ It was a bit hit in my house

    Hey runny, I made this recipe and it was great! The meat was juicy and tender. For the rice though, it falls off sometimes. So I either use the kind of paper you used to eat it with or I wrapped with seaweed on one side or used more oil.

    Hi Runny-san! I just made these burgers for myself after work tonight, and they are DELICIOUS!!! For anyone who's curious: I didn't use the mirin sauce because I don't have it and I used ground beef instead of ground chicken because I didn't have ground chicken. Also, I ate it like a regular burger between two pieces of bread instead of making rice patties because I didn't have time to cook rice. My point is, if you don't have a few of the ingredients, don't let that stop you from making it!

    @lazypuddycat I know I'm not Runny, but anywaaay.. as I know it's always better to shape the rice when its cold. And better if you wet your hands too with water. The point is to avoid the stickyness of the rice

    This recipe seems awesome. I remember eating orange-flavoured, pan-friend, chicken-filled rice balls once and they were absolutely delicious, but I'd never thought of substituting hamburger buns like this... I HAVE to try this next time I cook chicken.

    Lol when I was a little kid I couldn't say "both" either. It's a hard word! You can actually guess which region someone is from by how they pronounce it (at least in America). People from some places, like parts of the North, add an L, so it sounds like "bolth"

    OH, another option is to toast the bread BEFORE you grate it. Just make sure you grate it with a large holed grater. You're looking for bigger crumbs, not fine dust. :)
