    I watched a seminar on this. They said that cows that are grass fed produce vitamin K2 in their milk. By eating the products of a grass fed cows puts K2 in your body/blood stream which collect any Calcium in the blood and escorts it into the bone. Thus the people had beautiful teeth, strong bodies, and symmetrical faces. In France, spring time butter is loved because the cows are being grass fed (girls on the grass) and the butter is extra lovely. Over all, ethical farming should be practiced. I believe animals should have a wonderful life and only one bad day. We can vote every day....vote with your dollar!

    I was raised on rice and beans and a lot of prepackaged sweets(honey buns, zebra cakes, etc). I have really bad hormonal problems and am obese. I just had a son and am trying to start over so I bought this book at Sprouts

      I was raised on a traditional Cuban diet with lots of whole foods including meats like liver, heart, pig feet, oxtail, etc. There were rarely any packaged foods or eating out and I still developed PCOS, obesity, high cholesterol, and triglycerides.

    Sally Fallon and Mary Enig made another book called "Eat Fat, Lose Fat" where they recommend virgin coconut oil and a traditional foods diet to help lose weight, or recover from illness.

    You are my hero. About 5 years ago, I was really into this stuff - I seemed to have the time to make my own butter, yogurts, broth, etc. but the past couple years I’ve slipped into eating more commercially processed foods and further away from traditional home cooking. I just don’t feel great anymore! I came across your channel and watching your videos makes me feel at home. This feeling is familiar and I felt it five years ago when I really took care of myself - so thank you. I wish I could spend a day with you and soak up all your knowledge and be inspired by your kind aura. Keep doing the incredible work - you’re amazing!

    Love this! I’ve read a lot of the book and really enjoy the principles. It bothers me though that I don’t have access (or the money for!) all the nice dairy and grass fed meats.
    We do have local meats and I just thank the Lord for what we have to do our best with!!

    I love & have been using these books for years. So, no surprise I am enjoying your videos. I am surprised that no one references Adelle Davis (Let's Eat Right to Keep Fit, etc.). She championed bone broth, traditional foods & cooking techniques, etc to us Baby Boomers who were suspicious of processed foods. I have followed so many of her teachings over my life and have been somewhat amused by the rediscovery of bone broth, brassicas, and so on. Thank God for continued and new interest in nutrition.

    You know Mary, I think I eat mostly traditional foods but then I cave once in awhile and eat a bag of chips or drink rye and cokes:( But I do have to say, since I also cut way back on drinking caffeinated drinks, I feel a lot better. Commercial foods don't agree with me now that I'm in my 60's. Was very glad to see this video as I prefer traditional cooking with simple localish foods. "They" have warned us that if we don't eat well, we WILL be sick, so I am taking heed to that warning and will be ordering the book to learn more. Thank you once again Mary;)

      Tall Cedars - I am so with you. I’m in my 60s too and I feel better when I eat Traditional Foods but yes...every once and while...I enjoy a real treat...and yes, chips are one of them!! But yes, in the long run we need to eat for health and long life. Glad you’re here!! Love, Mary❤️😘❤️

    I'm fairly new to your channel, but I am enjoying your videos immensely. I used to manage a health food store, and am well aquainted with Sally and the Weston A. Price Foundation. I had the pleasure of meeting Richard Morris several years ago when I lived in Southern MD. He was a delivery driver to Annapolis for Joel Salatin's Polyface Farm. Excellent guy, he looked great, and he was kind enough to autograph my book for me. Keep up the good work!

    Hi Mary, thank you for the book recommendations. I'm thinking about picking up myself a copy of the "A Life Unburdened", since there are similarities in it regarding the foods I'm now eating, and what the author ate. And I also happen to enjoy hearing about other people's success stories.
    Since about 2.5 months ago, I have mostly abandoned processed foods with exception of my fiber one cereal, soy milk, and plain Greek yogurt. I have since seen positive results in my health. I feel better and I'm losing excess weight. Cleaning up my diet by removing junk and combined with walking as my form of exercise, I have so far shed 26 pounds.
    Based on book reviews I've read on "A Life Unburdened", I believe that the author has the right idea. He knows his stuff. Eat real food! Real food as in the kind that come as single ingredients, and you throw together yourself to prepare dishes.

I am in my early 60s so it can be tough but I have lost about 37 pounds so far. I am walking too!! But right now, I have been a bit sidelined because I hurt my foot. Where I've been learning how to make homemade bread by hand recently, I started thinking about sourdough. Sourdough bread will be a future project, as well as ACV. I have an opened store-bought bottle of ACV and it appears that the "mother" formed in it. I'm thinking that can help as a starter for homemade ACV later.

    I just discovered you channel today and liked the videos I’ve encountered so much that I subscribed. My mom passed away in January of this year and I was her primary caregiver. It was rewarding but also the toughest thing I’ve ever done, emotionally and physically. Since her death I have gained some weight - certainly not “obese,” but everyone notices and comments. (I’m 6’1”, and weigh a little over 200 lbs. That sounds okay, but it’s not muscle, but rather fat, and located in my midsection.) I have found that I get tired so rapidly. I do not have the energy to do anything, and no interest in doing anything at all anyway, to be honest. Also, I’m so irritable. I feel like I’ve just let myself go completely. However, I really enjoyed this video and especially what you say regarding the book “A Life Unburdened.” I know that it’s up to me to take control of my life, eat right, and cut out the processed foods I’ve found “comfort” (and rapidity) in. Thank you so much for your wonderful videos, and sharing such inspiring information and stories! Best - Adam

He passed away a few years ago from Parkinson’s disease. Such a debilitating illness. And like you, I was happy to take care of my parent but it could be exhausting at times. Go easy on yourself. It takes time to get back to where you want to be. You will love Richard’s story in A Life Unburdened. So many of us find comfort...in certain foods. But unfortunately, it doesn’t always comfort us. Usually there is a whole in our heart that needs to heal. It’s not about fad diets. It’s about being kind and gentle with ourselves...And rediscovering truly Nourishing Food that will heal our body and our mind...and in doing so, heal the hole in our heart.       @@MarysNest Sinigang (sour soup) is my most favorite. On a hot day it's Halo-Halo (crushed with evaporated milk and various other ingredients like fruit, jelly, flan, ice cream, red Asian beans, purple yam, etc). I also love pancit (stir fried rice noodle dish, lumpia (fried egg rolls), adobo (pork or chicken braised in a mix of water, vinegar, soy sauce, garlic, onions, a bay leaf or two, and pepper), sarciado (fish with bok choy and an egg scrambled into it), tinola (chicken with chayotes ) and other things I don't know the name of. When we were in the Philippines the only dishes I didn't like were the ones with Bitter Melon in them as it's the worst thing I've ever tastes and the taste permeates any dish it's in. In the Philippines they don't eat very many vegetables though. I tend to add lots of vegetables to most of the dishes when I make them

      @@MarysNest I had never heard of that book. I will have to put it on my "I gotta have this" list.
      Two things, one, your discussion at the end about paying attention to your foods and how you feel afterwards: I canNOT stress this enough, make and keep a food journal. Not just for what you eat, but afterward, how do you feel. You know you can get those make it yourself journal/bookkeeping/etc pages you can put into a notebook? Well some of them have pages for the times of the day and night. This is excellent for writing in about your food and what is happening to your body. if an hour or less after you eat, you feel queasy or nauseous, write it down. have grumbles after a few hours? Tomorrow, you probably will have gas. Monitor yourself. I went for two months having the same foods. Everyday had a specific menu and every Sun/Mon/Tue/Wed/etc, I ate what was on that menu for that day. Then after I ate, I hourly recorded what was going on at the end of the two months, I could see what was going on with my body with each meal. It was eye opening.
      Two, I have never noticed your cups match your drapes! Cool.

    Mary, you asked me if I ever used chicken bones from my roasted chickens and I have to say I do not. I have always felt like I would be using "second batch bones" because a lot of their "goodness" and flavor was left on the platter etc. I usually roast my raw bones to get that lovely rich color and depth of flavor. You are slowly changing my mind about using leftover already roasted once bones. I am going to start saving enough of them for my next bone broth and I will let you know if I felt robbed of goodness o.k.?
    While I have your attention, I want to ask you about making aspic with a meat stock or consomme. If you have, please do a video on it for us. We are expecting a real hot summer, and there is nothing that delights the summer palate as much as a beautiful aspic served on a nice cold plate. You've already got the vermouth, so you are on your way. Look at some aspic images on Google and then just let your creative mind wander! There is even a picture of a chicken aspic for your pet!! (They get hot in the summer too!) Let us know if you feel like taking on the aspic challenge? Can't wait for your reply....

Yes, give the leftover chicken carcass a try - and be sure to add in all the pan drippings. And if you can, save the carcass and drippings in the freezer, and once you have three - make bone broth. And if possible - throw in a few feet! :-) As to the aspic...yes, I will have to give that a try. What a delight that would be!! Thank you fro the inspiration!! Love, Mary

      @@MarysNest Every time I see chicken feet I buy them and freeze them. I get the store to vacuum pack them for me. I am so glad you are going to try the aspic. Every time I've had it - it was such a treat. The challenge is to get a real clear stock. You might even have to get your old chinois out from the garage! I am going to do a "total immersion" investigation of "everything aspic" so you will have some company taking on this challenge. I will look for the right molds for the chosen recipes. There are so many shapes out there. A garage sale may have some vintage molds from France and not know what they are. You may find a lovely old recipe book with great pictures from you "gently used" book stores. That was the greatest tip you gave me with the flour sacks. I ordered some from Amazon and promptly washed them with soap and a double rinse (no fabric softener). I got the clearest broth. Thank you Mary. This aspic may be the next in trend for 2019. What did we have last year? Of course bone broth has been "held over" for 3 yrs. now, but we can say move over avocado toast, and celery juice and hello aspic. I am so excited and I am glad you are so spontaneous Mary, and a good sport too.

      Hi Jessica, Thank you SO much for visiting!! I do bake with Einkorn and Emmer. And I will start doing some videos on those grains. Einkorn and Emmer - being ancient grains - are lower in gluten than some of the other grains, so I tend to like to mix them with other flours to get a good rise. But are you interested in baked goods that are 100% Emmer, etc? I am happy to do that too. Plus, do you like sourdough? Or do you prefer to bake with yeast? And one more question...do you prefer a no-knead or a kneaded bread? I want to tailor my videos as best I can to meet your interests.       @@MarysNest Well, I would like you to cover 100 % ancient grain with yeast, if that's even a tasty option! And if not, what is the least we can do to tweak to make it tasty? You are just a joy to watch and very knowledgeable. I have been fascinated by nutrition my whole life. It seems like all the food advice is so contradictory - so I just try to eat real food. Lately I have started experimenting with some intermittent fasting also.

      Jessica Highley Danner - Oh Jessica!! I am so glad you are here. I am trying intermittent fasting too. About 12-14 hours. It’s a tough road losing weight at my age but the IF helps. Yes, we just need to eat real food and preferably in season. Einkorn is tasty - it’s jus a bit dense...like 100% rye bread. But I’ll make a loaf so you can see what it’s like. No-Knead is best because it is the easiest. I’m not sure when I will be able to film but hopefully within the month. Personally, I like Emmer better as a cooked grain served with butter. But it can make a decent loaf of bread. Love, Mary

    Hi Mary, what if you really don't like sauerkraut? Do all fermented foods have that taste? I do, however, love pickled beets. Any suggestions?

      Becky Garland - Hi Becky, I understand completely. Each type of fermented vegetable tastes different...especially pickles. And you can add different herbs and spices to enhance the flavor. But yes, they will be tangy. However, after the fermentation process is done, you can add some sweetener like honey or maple syrup to sweeten the flavor. But be sure to add the sweetener after the fermentation process right before you’re ready to refrigerate the ferment. Adding the sweetener during the fermentation process - at room temperature - can create alcohol! LOL!! Hope this helps. Love, Mary❤️😘❤️
