I’d love to watch a video for making Socca. Our adult son developed a gluten intolerance a few years ago. This would be great for our family. Thank you for all you do and that you’re teaching us. I’ve had a traditional kitchen before it was a thing. ❤ back in the late 70’s when we started our family I stayed home and raised our children. I was frugal and didn’t waste anything. I always cooked from scratch, baked my own bread, made my own baby food and started a food co-op where we bought wholesome ingredients from a farm in Massachusetts. We lived in CT at the time. Molly Katzen’s cookbooks were my guides. We were vegetarians for a few years because our children wouldn’t eat meat. These skills are so important to today’s families with all the prepackaged and fast foods, chemicals, preservatives, etc. I’m going to be teaching your curriculum to a home school group here in the greater Fort Myers area this fall. I’m so excited. I have a degree in Education so I’m putting it to good use. We ❤ you Mary!
New sub here! I came looking for how to dehydrate vegetable stock in my air fryer and stumbled across your channel. Ive now been here hours 😂 You are definitely on to something with your skin care because I assumed you were around my age (55) and was stunned when you said 66! ♥️ I love that you included honey and especially manuka. My son had severe allergies as a child and I used to put a teaspoon of honey in water and it was his favourite drink. Now even my grandaughter loves "honey juice". I also drank copious amounts of manuka honey juice when I was recovering from throat surgery before my cancer treatment. It cut down the healing time dramatically as well as helped with the pain. Wonderful stuff ❤ Even our vet advised putting manuka honey on the dogs paws and bandaging them when he shredded all 4 paw pads. He was well on the road to recovery within 48 hours. Anyway, I will say goodnight (it's 1.3am here) and am sending love from the UK. You can expect to see me often as I will be working my way through your videos sweet lady ❤
The only thing I've ever made with dried beef are cheese balls! Cream cheese, chives dried beef, Worcestershire sauce, roll in chopped pecans, etc.. I'm going to have to expand my thinking on it.
That's an interesting way of pronouncing manuka. HERE IN NZ we pronounce it MA-nu-ka, Manuka is the Maori name for our native tea-tree here in NZ. It certainly is a great honey.
Yes, you are correct. We have the Melaleuca trees in Florida that are very similar to the Manuka trees in your country and I always mix up the two even though they are similar species. Love, Mary
When I make bread, I use equal parts bread flour and whole wheat flour, with a handful of oats thrown in. The texture is wonderful; it is great for slicing.

Omg. I haven’t had Chipped Beef on Toast in 50+ yrs! It was a mainstay in our 7 member household! Mom knew how to stretch a dollar…..and it was so quick to make.
I'm one of 10 children. Mom would make chipped beef gravy and we all loved it on toast or biscuits, but Dad wouldn't eat it. She would usually serve it with peas. Dad insisted he'd had his share of SOS in the Marines during the Korean war. He wasn't allowed to tell us what SOS was short for...

I have made homemade granola this week, I also make my own yogurt and butter now and find that butter and yogurt is so much better and I’m currently waiting patiently for my vanilla extract to get done, and I’m definitely not eating out anymore. I’ve dehydrated onions and peppers and mushrooms all since the beginning of 2024 I want to try making soap next and I have all of the ingredients already. I really enjoy your channel.

Yes, on the chip beef recipe I never had it, unless you call ground hamburger in gravy of over toast chip beef like. My relatives called it something else. My mom said it is a poor man's meal. While salt is a forever food, iodized salt has a shelf life of about five years because the stability of the iodized salt decreases over time with exposure, especially in the presence of moisture or metal ions. It is important to use it within the 5 years or donate it if you can't use it all. Then restock with fresh containers of iodized salt. That way you'll always have some on hand. Of couse, storing other salts is also important.
I remember learning about how honey does not go bad when for college I had to go to a museum where they found, honey stored from Ancient Rome and Egypt, and the honey was still good to ingest.
Oh my goodness. Manuka honey. I bought some at Trader Joe’s to use on my toast. I hated it and ended up using it in some barbecue sauce. Well this year I had some surgery and the doctor told me that a few of the dissolving sutures would not dissolve but work their way out. I ended up with a few little open spots. They were taking their time healing. When she saw them she said you need to get some healing honey. Healing honey? Turns out she meant manuka honey that I put in my barbecue sauce. She brought out a tiny tube, squirted tiny drops in and 3 days later all was healed. Need to go back to Trader Joe’s buy another bottle and this time put it in my first aid kit.
Chipped beef on toast was a favorite occasional treat when I was a kid. An updated recipe would be great. I would love to find a dried meat without all the added ingredients. I am in the process of restocking post covid. Now I have a dog and make his food at home, so I am looking for ways I can store extra food for him, too.
My grandmother taught me to put bay leaves in the flour jar and different things to keep the bugs away. That really does work. What I find interesting is that I have a big live bay bush in my front yard that bugs love to attack. Am Constantly having to monitor it and spray soapy water to get rid of the bugs.

I found a round shaker of iodized salt like the Morton you showed at the dollar store and grabbed it. Maybe should have grabbed a couple...but dollar stores have many great prepper pantry items.

I'd love a refresher on Chipped Beef on Toast ~ I grew up with my Grandmother making it and she always referenced the Depression and her pantry...she never went hungry and fed a lot of other people, sometimes with Chipped Beef. Just a note ~ dried Nori (seaweed) is a great additive to any dish, and good to eat just plain, a great source of Iodine and also I take 2 drops of Liquid Iodine every morning. Yes, you are right. Sorry for the mix-up. I am dating myself because the melaleuca honey - which is similar to the Manuka Honey - was all that was available here in the US years ago. I am on a dairy-free keto diet for health reasons. Do you know if I can make hardtack with coconut flour, garbanzo bean flour, other gluten-free flours, or even lentils? Garbanzo bean flour and lentils are not keto, but I can tolerate a small amount of them.

I have yet to acquire a flour mill, so I'm wondering if it's necessary to use a proper mill or is there another way to accomplish chickpea flour. However, I’m following a banana bread recipe that uses 250 grams of all purpose flour I’ve substituted it for organic whole wheat whole grain spelt + soaked this in kefir. My soaked flour now weighs over 400 grams. Do I use the whole thing ? (There are no liquid ingredients in the recipe other than eggs bananas and butter) Love your content xxxx 🩷
Oh my goodness! I’m so glad you’re here. I’m not 100% sure how to handle that recipe. What I would recommend is use the entire amount and see how it comes out. Often traditional foods cooking involves a little bit of trial and error. If the banana bread is too moist, you’ll know to cut back a little bit next time. Keep me posted. Love, Mary

Maybe salt will keep for over five years but even so...those of us that like to look ahead 5-10 years from now...at which point am I "replenishing" my long term or extended pantry items? I have made homemade granola this week, I also make my own yogurt and butter now and find that butter and yogurt is so much better and I’m currently waiting patiently for my vanilla extract to get done, and I’m definitely not eating out anymore. Yes, on the chip beef recipe I never had it, unless you call ground hamburger in gravy of over toast chip beef like. My relatives called it something else. My mom said it is a poor man's meal. While salt is a forever food, iodized salt has a shelf life of about five years because the stability of the iodized salt decreases over time with exposure, especially in the presence of moisture or metal ions. It is important to use it within the 5 years or donate it if you can't use it all. Then restock with fresh containers of iodized salt. That way you'll always have some on hand. Of couse, storing other salts is also important.

I remember learning about how honey does not go bad when for college I had to go to a museum where they found, honey stored from Ancient Rome and Egypt, and the honey was still good to ingest.
Oh my goodness. Manuka honey. I bought some at Trader Joe’s to use on my toast. I hated it and ended up using it in some barbecue sauce. Well this year I had some surgery and the doctor told me that a few of the dissolving sutures would not dissolve but work their way out. I ended up with a few little open spots. They were taking their time healing. When she saw them she said you need to get some healing honey. Healing honey? Turns out she meant manuka honey that I put in my barbecue sauce. She brought out a tiny tube, squirted tiny drops in and 3 days later all was healed. Need to go back to Trader Joe’s buy another bottle and this time put it in my first aid kit.

Chipped beef on toast was a favorite occasional treat when I was a kid. An updated recipe would be great. I would love to find a dried meat without all the added ingredients.
I am in the process of restocking post covid. Now I have a dog and make his food at home, so I am looking for ways I can store extra food for him, too.
My grandmother taught me to put bay leaves in the flour jar and different things to keep the bugs away. That really does work. What I find interesting is that I have a big live bay bush in my front yard that bugs love to attack. Am Constantly having to monitor it and spray soapy water to get rid of the bugs.
So weird. Not sure why, but that would be my luck lol.

I found a round shaker of iodized salt like the Morton you showed at the dollar store and grabbed it. Maybe should have grabbed a couple...but dollar stores have many great prepper pantry items.

I'd love a refresher on Chipped Beef on Toast ~ I grew up with my Grandmother making it and she always referenced the Depression and her pantry...she never went hungry and fed a lot of other people, sometimes with Chipped Beef. Just a note ~ dried Nori (seaweed) is a great additive to any dish, and good to eat just plain, a great source of Iodine and also I take 2 drops of Liquid Iodine every morning. The creamed hony you pictured is MANUKA hone, not melaleuca honey...melaleuca/tea tree is totally different than manuka.😊
Yes, you are right. Sorry for the mix-up. I am dating myself because the melaleuca honey - which is similar to the Manuka Honey - was all that was available here in the US years ago. I am on a dairy-free keto diet for health reasons. Do you know if I can make hardtack with coconut flour, garbanzo bean flour, other gluten-free flours, or even lentils? Garbanzo bean flour and lentils are not keto, but I can tolerate a small amount of them.

Hi Mary as a 16 year old I love your videos 🥰 you’ve inspired me to start soaking my flour ! However, I’m following a banana bread recipe that uses 250 grams of all purpose flour
I’ve substituted it for organic whole wheat whole grain spelt + soaked this in kefir.
My soaked flour now weighs over 400 grams. Do I use the whole thing ?
(There are no liquid ingredients in the recipe other than eggs bananas and butter)

Oh my goodness! I’m so glad you’re here. I’m not 100% sure how to handle that recipe. What I would recommend is use the entire amount and see how it comes out. Often traditional foods cooking involves a little bit of trial and error. If the banana bread is too moist, you’ll know to cut back a little bit next time. Keep me posted. Love, Mary

Maybe salt will keep for over five years but even so...those of us that like to look ahead 5-10 years from now...at which point am I "replenishing" my long term or extended pantry items?
