Low Fat Cauliflower "Cheese" Sauce

  • I show how to make low fat / oil free / gluten free / soy free / nightshade free / vegan cheese sauce made from cauliflower and nutritional yeast. And I show an example of how to use it by putting it on corn pasta.
    Ingredients:
    2 cups of water
    12oz bag of frozen cauliflower florets
    (or 1 1/2 - 2 cups of fresh cauliflower florets)
    1 teaspoon of onion powder
    1/2 teaspoon of garlic powder
    1/8 teaspoon of turmeric powder
    1/4 cup of of nutritional yeast
    1 tablespoon of cornstarch
    1/2 tablespoon of lemon juice
    Sea salt to taste
    (I used 1/4 teaspoon in the video)
    Optional:
    1/4 teaspoon of smoked paprika
    (if not avoiding nightshades)
    1/4 teaspoon of dry mustard
    1 tablespoon of mellow white miso
    (if not avoiding soy)
    Directions:
    Boil 2 cups of water.
    Add cauliflower and simmer on low for about 15 - 20 minutes
    (it will be ready when a fork goes through it easily).
    Put cauliflower and water in a blender.
    Add the remaining ingredients and blend until smooth.
    Pour back into pot heated on low and stir for 2 minutes.
    If it's too thick, add a milk substitute and stir longer.
    If it's too thin, add more corn starch and stir longer.
    Use as you would cheese sauce.
    It goes well with pasta.
