Beans are a great idea as well. I’m going to try the sauce using both beans and cauliflower. And adding a fresh chili or jalapeño is also a great idea I read in these comments. Wonderful ideas!
Delicious recipe! I just tried it because I was wondering what to do with some leftover steamed cauliflower that I had. I didn't have time to roast my bell pepper so I just put a fresh bell pepper in and added a bit more smoked paprika to make up for the roasted taste. Thank you so much!

Cruciferous health for the body can be a bonus here if one adds mustard powder or a bit of other raw cruciferous veg so the enzymes will work their magical goodness to make sulforaphane. Cruciferous vegetables kill cancer in vitro and appear to help that in bodies too! as well as cutting covid replication in half and feeding healthy cells for health & energy. 💚 Thank you Chef AJ for the recipe it looks so easy I am definitely getting frozen cauli with my next grocery run ❤

I love to blend cashews and tofu and then culture it for a more authentic "cheesy" flavor (also I can make it in bulk and it lasts longer), but it is definitely on the higher calorie side. So I plan on trying a half and half version to cut down on the fat/calories. Meanwhile, I should stop torturing myself, as I'm on the 10th day of a water and very low calorie-low sodium veggie broth fast.

I have a head of cauliflower in my fridge and need a sauce for a recipe tomorrow. I'm going to try this one. Simple, quick and easy gets my vote. Is it possible to come up with a “cheese” sauce without using nutritional yeast…for those of us with Crohn’s and who need to avoid all yeast? Would this be worth making with the nooch?

I use a fresh jalapeno in my cheese sauce. This is great using the cauliflower as I have been using white beans. Thank u so much

The raw cruciferous doesn't have to be added to the cheese sauce, just add it to your mouth 😄
