The video description says he uses a liquid cheese mix from Gold Medal. They make a mix called Cheddar Easy, that you can buy in 30 pound buckets on Gold Medal's website, for a lot less than the $250 he quoted. It costs about half that much. They also make a powdered mix that you can add in to amp up the flavor. Also, a lot of popcorn shops use 4 cups per 8 gallon batch--3 cups of Cheddar Easy, 1 cup of melted butter and 1/2 cup of Gold Medal cheddar or other flavor powder (I like to use Ranch). Also, make sure to use mushroom popcorn because it doesn't break apart in the mixer like butterfly popcorn. If you buy from Gold Medal, they have a support number you can call for questions and they're very helpful.

@@localppc242 Good catch--I just looked at the instructions for my old machine and it was an 8-gallon pot, not a 5-gallon. The instruction manual that came with the pot say 3 cups of Cheddar Easy, plus 1 cup of butter, so at least I remembered the cheese mix recipe correctly. I haven't done carnivals for quite a while. So for a 5-gallon pot, it seems like that would be about 2 cups of cheese mix and 2/3 cup butterfat, plus 1/3-ish cup of flavor powder.

Then, when it comes out of the mixer, I shake about 1/2 a cup of Gold Medal Savory Shakes over the popcorn while I'm tossing it. I typically use Ranch flavor because it tastes great with cheese, but Bacon, Jalapeno, Garlic Parmesan or a bunch of other flavors would also taste great. Also, Gold Medal has a really good support line you can call if you have questions about how to use their products. They're really helpful and responsive.

Not if you bake it for 45 minutes after it's coated. (250 degrees)
It's specially formulated not to make the popcorn soggy. Any oil product won't make popcorn soggy. And yes I.own a popcorn shop..
