both apple cider vinegar and white vinegar kill bacteria so I wipe everything down with that in the kitchen after working with raw meats, including my hands
Virtuality Victoria while vinegar does kill some bacteria it’s not all types also it only contains about 5% of the acid that does this. It’s not strong enough. It’s better to use a soap or other cleaner. I use it for swimmers ear so I’ve done a good amount of research. Nothing sucks worse than food poisoning.
Noooo! Sautee your veggies till softened. EXCEPT garlic. You add the garlic maybe 30 seconds to a minute before you add your meat. Otherwise it will become bitter. Even if it's not noticable to the avg person. It is important
Just a few suggestions, onions first, then garlic, overcooked garlic gets bitter, then add your bell pepper and chicken, cook with a little olive oil instead of sesame oil, and i would use rice instead of tortillas. I always cook extra rice, and freeze the extra, and tomatoes would be great in that too!
Take a small plastic bowl that has a seal tight cover, take your garlic cloves, and put them inside the small sealed bowl and shake vigorously. It will remove the skin and the husk so all you will have to do is pick out and chop the garlic. Just a little help from a great cook!
If you don't mind the constructive criticism; more garlic, red onions for fajitas, and as someone else mentioned veggies first then chicken. Rice and beans with salsa in a separate container is a must when I travel. It makes a hearty meal in a pinch and it would take this one meal and make it into two. I go for brown rice and black beans for maximum healthiness. For seasoning, chili powder and cumin are a great starting place along with the standard salt, pepper, and garlic. A few dashes of smoked chipotle powder will knock your socks off in terms of deliciousness

A small lil suggestion for u. Just use ginger and garlic paste and just buy a mixture of spices rather then keeping black pepper salt etc. Just use one mix spices pack. That will reduce ur space and help to get u all the flavors

Food prep tip: place the cutting board over a hand towel so it doesn’t wobble or slide around. Just for extra stability for your safety so you don’t accidentally chop off a finger or two.
There is a suggestion like whenever you're cooking chicken or anything in which you need the garlic. U can do one thing that will save your time. So when u are leaving ur home u just take a few garlic cloves and grind them and after that u store them in a closed air tight container and refrigerate that and when u are ready to cook just take that container out and u are ready ☺️☺️.
I cut the ends off my garlic cloves, split them and remove the green stripe that runs down the middle. I read about doing this when making homemade hummus. Something to do with the bitterness of the green stripe.
Not sure where I heard this, but try chopping the garlic up once, then add a good pinch of salt to the garlic. Then start chopping it all up. Something about the salt sticking to the garlic and creating friction and making it not stick to the knife as much. Also serves as a good salt-to-garlic flavor ratio that you can do without even measuring or thinking about it.
Use a pair of scissors dedicated for food to cut your meat! You can cut it right from the bag to your skillet and only have to sanitize/wash the scissors. We do this at home and love it.

Yeah, then every time you gotta run to Wal*Mart to pick up some minor forgotten incidental you'll have to uproot your life. I've done the Vanagon thing X 4; never again. Vanagons were a pain-in-the-ass 30 years ago, even more so, now. Get a small trailer and a pick-up truck. You'll be much happier with far LESS hassle.
Don't worry too much about "cross contamination" of things being cooked. They're being cooked and as Jacques Pepin says, if they survive the pan or oven, they deserve to live. What drives me nuts is using the same spoon in multiple jars not cleaning them between or dirty hands on jars or bottles. Fried peppers and onions just has such an amazing smell.
Correct me if I'm wrong but you don't have to worry about cutting things in a certain order, in terms of sanitation. Its all going to get cooked. As for sanitizing your flipper (a spatula is technically something else) again you don't have to worry about it. The dangers in cooking a chicken is making sure it cooks through, that is making sure the inside is sufficiently hot to kill the bacteria on the inside which is way less than the temp the outside is experiencing. Simply put, the cooking process sanitizes your flipper.
Try a cooking spray like PAM. It has a really long shelf life, you never have to worry about it spilling and it has a neutral taste (sesame oil traditionally isn’t used in Mexican food). A sharp knife and keeping your fingers tucked back will save you from being hurt when you can’t get to help. You can tell how hard you were pressing down. With a good sharp knife it should do the work for you and it’s safe. Great videos!!

I dip my knife in any type of oil (mainly canola or olive). Works well. They say you are supposed to let you onion soak in the cold water. I've learned the oil helps make it a little easier to cut and keeps me from crying while cutting.
Choose your oils for cooking/frying based on their smoke points. If the temp goes beyond the smoke point for a particular oil/fat (including butter), then it creates a toxic fume. The best oil for frying are those with high smoke points such as avocado oil. Olive oil is better for lower temps.
Hi chad, you should get you a carbon steel frying pan, when the pan is seasoned right, it is super nonstick and will outlast most other nonstick pans. these pans will last forever and are practically indestructible. the surface will never peel or flake and they make taste soon good. the only downside is if you cook acidic foods it will pull up your seasoning but that's not a big deal just reseason.
I am inspired to great extent the way you live your life. We are not here for millions of years so we should enjoy each and every moment of life. Loved your style and video .
Just a tip, be careful putting garlic into a very hot pan it can burn easily and if that happens it makes the dish very bitter. Especially if you making a meal where you cook the onions first, rather add some other ingredients before you put the garlic in.
So I really enjoy your cooking videos, but I do have some tips to consider. Most markets sell pre cut veggies and for your situation I think that would work really well. The same for the garlic, my recommendation is to but minced garlic if available or better yet peeled garlic. This is usually found in a small container @ the store and will keep up to 2-3 weeks in a cool environment, its better than dealing with a head of garlic that you have to peal.. I’m a huge outdoor cooking guy that own 4 grills and pretty much grills just about 365 rain or shine.
Dude the van life is where it’s at. I used to take my wife and kids to work with me in our van. We had a 2016 Nissan NV 3500. We updated it earlier this year for our toe vehicle.

When you have to poop, you poop. Weather only determines how long will you want to wait till you actually have to go in to that snowstorm to do your business.
I loved your video and knowing there was a storm outside made it even better. My tips on making the cooking even better are when you add the chicken let it sit in the pan for a while without stirring it. I can’t tell you how long because I have no idea how hot the pan was. The idea is you want the chicken to catch a little on the pan. That caramelises the surface and its what gives you an enhanced flavour. Trial and error will teach you how long to let it sit. Then flip it and repeat. The other thing you could do is use a lid. The steam coming off the food is hot enough to sanitise your spatula if you let it rest on the food under the lid for a minute or so. That may save you a cleaning up step. Add a little water to the pan after you have dished up and replace the lid to use the steam to clean the pan. That will loosen up the stuff that remains making it easier to clean. When we go camping I take a little bottle of water and washing up liquid solution that I can spray onto things and then wipe them clean with some kitchen roll. Adding half a teaspoon of MSG to that meal during the frying of the meat will also make it taste really good. Some people are frightened of MSG but I believe its safe and its used by every takeaway in the UK so the government must think its safe as well 👍🙂
Cooking tip: try not start a sauté with garlic because it gets bitter when overcooked. Onions are better to start with since it has a lot of moisture and caramelizes nicely.

I agree with the garlic first. I agree with the chicken second. It will take longer to cook the chicken than the peppers so why ruin the peppers?

Choose your oils for cooking/frying based on their smoke points. If the temp goes beyond the smoke point for a particular oil/fat (including butter), then it creates a toxic fume. The best oil for frying are those with high smoke points such as avocado oil. Olive oil is better for lower temps.
You can grow the garlic cloves by sticking them in water. They grow garlic chives which are also great for cooking or adding to salads.
When you cut the onion in half. Lay the half of the onion on its side which is much more stable to cut into slices instead of standing on its end.

Just a tip, cook chicken first and throw the garlic in near the end because it is easy to burn and will still give you that nice flavor.
Hi chad, you should get you a carbon steel frying pan, when the pan is seasoned right, it is super nonstick and will outlast most other nonstick pans. these pans will last forever and are practically indestructible. the surface will never peel or flake and they make taste soon good. the only downside is if you cook acidic foods it will pull up your seasoning but that's not a big deal just reseason.

Just a tip, be careful putting garlic into a very hot pan it can burn easily and if that happens it makes the dish very bitter. Especially if you making a meal where you cook the onions first, rather add some other ingredients before you put the garlic in.

So I really enjoy your cooking videos, but I do have some tips to consider. Most markets sell pre cut veggies and for your situation I think that would work really well. The same for the garlic, my recommendation is to but minced garlic if available or better yet peeled garlic. This is usually found in a small container @ the store and will keep up to 2-3 weeks in a cool environment, its better than dealing with a head of garlic that you have to peal.. I’m a huge outdoor cooking guy that own 4 grills and pretty much grills just about 365 rain or shine.

Pro tip, throw garlic in only for the last 3 seconds it’s so of cooking. It doesn’t take much to cook the minced bits but it is easy to overcook them.
Dude the van life is where it’s at. I used to take my wife and kids to work with me in our van. We had a 2016 Nissan NV 3500. We updated it earlier this year for our toe vehicle.

I loved your video and knowing there was a storm outside made it even better. My tips on making the cooking even better are when you add the chicken let it sit in the pan for a while without stirring it. I can’t tell you how long because I have no idea how hot the pan was. The idea is you want the chicken to catch a little on the pan. That caramelises the surface and its what gives you an enhanced flavour. Trial and error will teach you how long to let it sit. Then flip it and repeat. The other thing you could do is use a lid. The steam coming off the food is hot enough to sanitise your spatula if you let it rest on the food under the lid for a minute or so. That may save you a cleaning up step. Add a little water to the pan after you have dished up and replace the lid to use the steam to clean the pan. That will loosen up the stuff that remains making it easier to clean. When we go camping I take a little bottle of water and washing up liquid solution that I can spray onto things and then wipe them clean with some kitchen roll. Adding half a teaspoon of MSG to that meal during the frying of the meat will also make it taste really good. Some people are frightened of MSG but I believe its safe and its used by every takeaway in the UK so the government must think its safe as well 👍🙂
Cooking tip: try not start a sauté with garlic because it gets bitter when overcooked. Onions are better to start with since it has a lot of moisture and caramelizes nicely.
