    I followed your advice and let my mackerel fillets dry out in the fridge overnight and then broiled them and it was even better than I imagined it would be! This is my new favorite way to cook mackerel.

    come off it! she did it perfectly like she's been doing it for a hundred years, for all you nitpickers. She obviously knows what she is doing and what she wants out of that small mackerel. so what if she didn't call it a "backbone"or called the kidneys a vein, her technique and knowledge is otherwise spot on and righteous.

    Hi and many thanks for the upload OK?
    Firstly congrats of the best filleting I have ever seen, and second you have confirmed I am right in my preferences for a heavy deep knife to fillet, and something that several people had said was wrong, was me leaving the fish in the fridge over night and it dries and firms just as you show.
    I was told it was wrong to dry the fish out like this.
    So I am glad you have given me back my confidence to use a heavy knife and dry the

      Derek Borba Not sure if that stereotype is accurate, but I had the same experience with Viets too.
      Maybe because most are refugees and they felt that they had to really adopt American values, like the bad habits of American women, to avoid suspicion of being Communist or something, I dunno. Because of that, it basically makes most of them just as unfit for marriage or child-rearing as most American women are. If you still have a thing for Viets, avoid those living in metropolitan centers like NY, SF, LA, etc. Actually, it would be best to avoid women from those areas.
      Suffice to say, I've learned to avoid them just as I've learned to avoid most American women and fully Americanized women. Thankfully, there are other "Asians" that are not fully "corrupted." Some Japanese and Korean women are still marriage material and still knows traditional things like cooking. You can't always cook to feed everyone or get take-out. If you're desperate, there's the Chinese - make sure they aren't Communists lol.

    Thank you for the "how to," just got into scuba-spearfishing and was needing to know how to fillet a fish, something I haven't done since my younger years, actually have Spanish Mackerel swim by every once in a while in my part of the ocean. This doesn't deserve the 60 dislikes or all the ignorant comments.

    here in Australia the spaniards we catch can be 6 feet long ! and we dont bother to remove the head and guts Why bother, you're only after the fillet

    Nice vid. Usually a filet knife is really thin, I was impress you can actually do such good cuts with a big heavy knife.

    I'm a spearfisherman, some times i catch spanish mak...but never eat them mostly i give away to friends who like it....but now when i go spear and catch this kind of fish,,,I WILL COOK AND EAT THEM....thanks you for your knowledge... oh and good english :)

    Great tutorial! BTW, to answer Lain's question of why you met keep your knife clean, it is bc you must have a clean knife when filleting fish to minimize the spread of the digestive enzymes that fish have in their guts: it's a precautionary measure.

    Thank you Andreas...finally! Most of Japanese dishes are designed to go with rice. So, I would serve this with rice, miso soup, 2~3 small vegetable disehs such as spinach ohitashi, pickles, etc. Let me know how it turned out when you make it:)

    Thank you for sharing this video. The instructions are easy to follow and informative on how to fillet a fish, which also applies to to fishes in general. I use a fillet knife for the process, but I would rather use that knife of yours--which in of itself would make cooking much more enjoyable!

    Very nice video! Looks delicious! I would broil it with the bone in but that's because I don't mind picking them out while eating them. The broiled bone can add to the grilled flavor very much. Thanks for sharing your technique. You are quite good with the knife!

    the knife has spots because it is high carbon steel. it develops a "patina" overtime which actually protects the knife. you just have to make sure to always dry a high carbon steel knife because it is prone to rusting

    'Fish Head meat tail'. This is a saying that the head is the best part in fish and the tail the best in meat like ox tail soup. I often see Japanese res serves in whole fish and they mystically spit out the bone into tray. What a wonderful people they are.
