Mr. Garcia obviously has a deep connection with nature, food, life, and the human condition, much like Steve. I would love to see additional collaborations with this chef and more like hime from across our great country. Top notch gentlemen.

Eating tongue is “in” now. Growing up with grandparents who went through the Great Depression, eating tongue was a normal part of my life and I’m 35. Needless to say when I brought tongue to college in the early 2000s, my roommates had some things to say. Then I made sandwiches for them….

Tongue is probably the most underrated piece of meat in the US... mesquite smoked beef tongue with just some adobo is by far the best thing around.
